CAKE MIX COOKIES



CAKE MIX COOKIES
1 box cake mix (any variety)
1 cup semi-sweet chocolate chips (can substitute caramel or peanut butter chips or a combination)
1/2 -1 cup oatmeal ( put in as much as you can!)
1/2 cup oil
2 eggs, slightly beaten
1/2 cup raisins (optional)
1 tsp. vanilla (optional)
nuts (optional)
Preheat oven to 350º. In a large bowl, combine all the ingredients, blending well. If the mixture is too stiff, add a little water. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake at 350º for 8-10 minutes or until set. Cool 1 minute before removing form the cookie sheets.
VARIATION
Use white cake mix and add a pudding mix. Add strawberry, for tasty pink cookies. If you use pudding, you will need to add some water (about 1/4 cup). Also, the pudding tends to make the cookies sweeter.

CAKE MIX COOKIES #2
1 (9 oz.) pkg. yellow cake mix (or your favorite flavor
2/3 cup oatmeal
1/2 cup butter or margarine, melted
1 egg
1/2 cup chocolate chips, butterscotch chips, peanut butter chips, M&Ms
For a healthier cookie, substitute raisins in place of the chips.
Preheat oven to 375º. In a mixing bowl, beat the cake mix, oatmeal, butter and egg. Stir in the chips. Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake for 10-12 minutes or until lightly browned. Immediately remove to wire racks to cool. Yields about 2 dozen.

RED VELVET COOKIES
1 Box Duncan Hines Red Velvet Cake Mix
2 eggs
1/3 cup oil
Mix all ingredients together. This will make a cookie dough. Roll into balls and place on a lightly greased cookie sheet. Flatten down slightly (depending on the thickness you desire). Bake at 375° until the tops crackle (about 8-10 minutes) or until desired doneness. Cool and then frost with basic cream cheese frosting

PEANUT BUTTER COOKIES
1 Yellow Cake Mix
2 Tbs Water
1 C Peanut Butter
2 Eggs
1/2 C Cooking Oil
Preheat oven to 350º Combine all ingredients and mix well. Drop from a teaspoon onto a ungreased cookie sheet. Criss cross with a fork. Bake at 350º for 10-12 minutes or until golden brown. Cool on a cookie sheet for a minute then remove to racks to finish cooling. Makes 4-5 Dozen

CHOCOLATE ITALIAN COOKIES
1 chocolate cake mix
2 eggs
1 3/4 c flour
1/2 c water
1/2 c oil
the above is the basic recipe
1 tsp nutmeg
1 tsp vanilla
1 tsp cloves
1 tsp cinnamon
1 c chopped nuts
1 c raisins -can soak in water
if you want cookies darker, add cocoa
Mix together, roll in balls. Drop on cookie sheet and bake 10-12 at 350º. Do NOT over cook.
GLAZE
3 c confectioners sugar
1 1/2 tsp vanilla
4 T milk
mix, drizzle over cookies
VARIATIONS -
you can use any cake mix for the basic mix, then add what ever you want.

CHOCOLATE ITALIAN COOKIES #2 - Rita Rizzo
2 chocolate fudge cake mix
4 eggs
1 1/2 c water
1 1/2 c oil
mix the above together
1 T baking powder
5 - 5 1/2 c flour
2 T cloves
2 T nutmeg
2 T cinnamon
1 c cocoa
add to the above mixture
then add 1 c raisins and 1 c chopped nuts
bake 350º for 8 - 10 min. DO NOT over bake. Frost while warm
FROSTING
1 1/2 # confectioners sugar
1/2 stick margarine
1 egg white
milk as needed
mix together. frost cookies

PEANUT BUTTER BARS
1 pk DUNCAN HINES Peanut Butter Cookie Mix
1 Egg
1 T Water
1/3 c Chopped peanuts
WHITE GLAZE
1/2 c Confectioners' sugar
2 tsp Water
CHOCOLATE GLAZE
1/4 c Semi-sweet chocolate chips
2 tsp CRISCO Shortening
Preheat oven to 350º
FOR BARS,
combine cookie mix, contents of peanut butter packet from Mix, egg and 1 tablespoon water in large bowl. Stir until thoroughly blended. Stir in peanuts.
WHITE GLAZE, place confectioners' sugar in small bowl. Add water, 1 teaspoon at a time, stirring until smooth and desired consistency. Drizzle over cooled bars.
CHOCOLATE GLAZE,
place chocolate chips and shortening in small resealable plastic bag; seal. Place bag in bowl of hot water for several minutes. Dry with paper towel. Knead until blended and chocolate is smooth. Snip pinpoint hole in corner of bag. Drizzle chocolate glaze over white glaze. Allow glazes to set before cutting into bars. Makes 18 bars.

CAT POOP COOKIES
Chocolate
1/2 Cup Honey
2 Cups Flour
2/3 Cup Margarine
1/2 Cup Cocoa
1 Egg
1 Teaspoon Vanilla
Grapenuts Cereal
Microwave honey on high until bubbly (about 1 min.) Add marg. Mix. Add egg and mix well. Mix all other ingred., except cereal. Chill 1 hour in freezer or several hours in fridge. Roll dough into asst. shapes of cat poop. Roll in cereal. Bake at 350º for 10-15 min. Serve in new litter box on a bed of grapenuts. Use a new litter scoop to remove.

NO PEEK BEEF CASSEROLE - Lou Putnam
2 lbs. stew beef, cut in 1" pcs
1-1 3/8 os pkg Dry Onion soup mix
1/2 c red wine
1 10 oz can cream mushroom soup
1 can mushrooms [optional]
put all in crock-pot. cook all day on low. DO NOT PEEK. serve over noodles.

SOUR CREAM SAUCE for cucumbers - Mom MacCubbin
1 T sugar
1 T vinegar
1/2 c sour cream
1/2 tsp salt
mix together. slice cucumbers and put in sauce.

MINT CRACKERS - Art Nolan
2 tubes Ritz crackers
1 c milk chocolate wafers
1 pkg. mint chips
melt chocolate, dip crackers in chocolate using fork. place on wax pape till set.
