CHRISTMAS RECIPE

1/2 cup of Hugs
4 teaspoons kisses
1 cup of Holiday Cheer
1/2 cup of Peace on Earth
3 teaspoon of Christmas Cheer
2 cups of Goodwill Towards Men
4 cups of Love, 1 Sprig of Mistletoe
1 large bag of Christmas Snowflakes
Mix Hugs, Kisses, Smiles, and Love .
Blend in Holiday Cheer, Peace on Earth,
Christmas Spirit and Goodwill Toward Men.
Use the mixture to fill a large, warm heart where it
can be stored for a lifetime, for it never goes bad!
Serve as desired under Misteltoe, sprinkle liberally with
Christmas Snowflakes it is especially good when accompanied
by Christmas carols and family get-together. Serve to one and all!

MERRY CHRISTMAS


YAM & JAM MUFFINS
1-3/4 cups all-purpose flour
1/3 cup packed brown sugar
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon apple pie spice or ground cinnamon
1/4 teaspoon salt
1/2 of a 17-ounce can sweet potatoes, drained (about 1 cup)
1 beaten egg
1/2 cup milk
1/3 cup fruit jam or preserves (such as plum, strawberry, peach, or apricot)
1/4 cup cooking oil
Jam Icing (see recipe below)
1. Lightly grease twelve 2-1/2-inch muffin cups or line with paper bake cups; set aside.
2. In a large bowl combine flour, brown sugar, baking powder, baking soda, apple pie spice, and salt. Make a well in center of flour mixture; set aside.
3. In another bowl mash the drained sweet potatoes with a fork. Stir in egg, milk, jam, and oil. Add sweet potato mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy).
4. Spoon batter into prepared muffin cups, filling each about three-fourths full. Bake in a 400 degree F oven for 18 to 20 minutes or until golden and a wooden toothpick inserted in centers comes out clean. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups. Cool slightly. Drizzle muffins with Jam Icing and, if desired, top with additional jam or preserves. Makes 12 muffins.
JAM ICING:
In a small bowl stir together
3/4 cup sifted powdered sugar,
1 tablespoon fruit jam or preserves (such as plum, strawberry, peach, or apricot),
1/4 teaspoon vanilla,
enough milk (2 to 3 teaspoons) to make icing of drizzling consistency. Makes about 1/4 cup.

YAM CUP CAKES W/ORANGE BUTTERCREAM ICING
1 (18.25-ounce) yellow or butter cake mix
2 teaspoons ground cinnamon
1 (15-ounce) can sweet potatoes, drained and mashed or 1 cup mashed sweet potatoes
2 eggs
2 tablespoons canola oil
1 cup water
Orange Buttercream Icing (see recipe)
Preheat the oven to 350° F. In a mixing bowl, combine the cake mix, cinnamon, sweet potatoes, eggs, oil and water and mix until well blended. Transfer batter into cupcake paper lined tins and bake for 18 to 22 minutes or until the center bounces back to touch. Cool and ice with Orange Buttercream Icing (see recipe).
Orange Buttercream Icing
4 tablespoons butter
1 (16-ounce) box confectioners’ sugar
1/4 cup orange juice or more if needed
1 teaspoon vanilla extract
In a mixing bowl, cream the butter and gradually add the confectioners’ sugar and orange juice until smooth and creamy. Add vanilla and frost the cupcakes. Makes 24 cupcakes

SWEET POTATO CAKE
1 box Duncan Hines French Vanilla cake mix
3 eggs beaten
1 29 oz. can Bruce's sweet potato pie filling
1/2 cup brown sugar
1/2 cup chopped pecans
Heat oven to 350°. Grease and flour Bundt pan. Into prepared pan sprinkle mixture of brown sugar and chopped pecans. In electric mixer, mix dry cake mix with beaten eggs and the sweet potato pie filling. Pour into Bundt pan and bake at 350 for about 1 hour. Test for doneness with cake tester or toothpick. When done, let sit for 10-15 minutes on wire rack in pan, then invert onto a 10" plate. No frosting is needed because it has its own crunchy brown sugar/pecan topping.

LEMON BREAD - My Mom's
for topping
1 Lemon
1/2 c sugar(to add to lemon juice)
Bread ingredients
1 1/2 cups flour
1 cups sugar
1 tsp baking powder
1/4 teaspoon salt
6 T shortening
1 tsp lemon flavoring
2 eggs
1/2 c milk
1/2 c nuts
rind of 1 lemon, grated
squeeze lemon, add 1/2 c sugar, set aside.
Mix bread ngredients together, add lemon rind and nuts, put in loaf pan, bake 350º 1 hr.
TOPPING
after bread is done, poke holes in top of loaf while still hot. Pour lemon and sugar mix over top

HOLIDAY QUICK BREAD FRUITCAKE
2 eggs
2 cups water
1 pkg. Pillsbury cranberry quick bread mix
1 pkg. Pillsbury date or nut quick bread mix
2 cups chopped pecans
2 cups raisins
2 cups (12-13 oz.) candied cherries
1 cup cut-up candied pineapple
Heat oven to 350 degrees. Grease and flour the bottom and sides of a fluted tube or 10" tube pan. In large bowl, combine eggs and water. Add remaining ingredients. Stir by hand until combined. Pour into prepared pan. Baka at 350 degrees for 75-85 minutes or until toothpick comes out clean. Cool in pan 30 minutes. Loosen edges and remove from pan. Cool completely. Wrap in plastic wrap or foil and store in refrigerator.

PINTO BEAN FUDGE
6 squares unsweetened chocolate
1 C. butter
1 tsp. vanilla
1 (1 lb.) can vegetarian refried beans
2 lbs. powdered sugar
1 C. chopped walnuts
Melt chocolate with butter. Add beans and vanilla and mix well. Beat in powdered sugar and nuts and spread in 9 x 13 pan. Chill and cut.

JELLO POP CORN BALLS
Take 1 cup of light corn syrup and 1/2 cup of sugar. Bring to hard boil.
Add 1 small (3 oz.) box of Jello (dry) to syrup. Mix well.
Pour over 4-5 Quarts of pop corn. Mixture will be HOT.
Cool slightly and grease your hands. Form balls the size you like. Wrap each one in saran wrap to keep soft.
The cherry, orange, black cherry, lime, raspberry and strawberry are wonderful.

CHRISTMAS GLOGG
4 cups cranberry juice cocktail
2 cups grape juice
1/2 cup light raisins
6 whole cloves
6 inches stick cinnamon
4 whole cardamon, shelled
1/4 cup sugar
Pour juices and raisins in automatic coffee maker. In perk basket place spices and sugar. Allow to go through perk cycle. Remove basket with spices. Serve hot in mugs, adding a few of the raisins, if desired.

HOLIDAY CRAB DIP
1 block of Cream cheese room temperature
1 can of crab 2 tablespoons of seafood cocktail sauce
Salt and pepper and garlic to taste
Stir drained crab into the cream cheese. Add the 2 tablespoons of seafood cocktail sauce. Season to taste.

CHRISTMAS PISTACHIO BREAD
1 package instant pistachio pudding
4 eggs
1/4 cup vegetable oil
1/8 cup water
1 cup sour cream
1 cup maraschino cherries
1/2 cup nuts
Combine all ingredients, mixing with a spoon. Grease 2 loaf pans. Put dough in pans. Mix 1/4 cup sugar, and cinnamon to taste, and sprinkle over dough. Bake at 350 degrees F for 45 minutes. Cool and wrap in foil. Best if made a couple of days ahead of serving.

CREAM CHEESE & PEPPER JELLY DIP~Mary/marmac34
Take a brick of cream cheese, let it set out on the counter for a little while to soften. Low fat is ok.
Pour a jar of spicy jelly over it.
Put out some sturdy crackers and some spreading knives. If the crackers aren't sturdy and the cheese is rock hard, the crackers will break off in the cheese.
VARIATIONS:
CREAMY CREAM CHEESE & PEPPER JELLY DIP
Take a cream cheese brick, whip it up a little (why pay for whipped cream cheese and butter when you can do it yourself), then DUMP the jelly over. No broken crackers.
CHIPOTLE RASPBERRY JAM/JELLY
You can get it at Wal-Mart.
Place a block of cream cheese on a glass platter and the Chipotle Rasberry jelly on top.
