ROMA'S RECIPES 1

PINEAPPLE GARDEN CAKE - Roma26
1-yellow or orange cake mix
1-lrg can of Mandarin Oranges, drained
1-small can Mandarin Oranges, drained
11 oz. Orange Juice
1/2 cup of applesauce
3 eggs
mix all, pour into 9 x 13 pan. Bake 350° 35-40 min, cool.
Frosting:
2 boxes INSTANT Vanilla Pudding
use only 1 1/2 cups milk
20 oz can WELL DRAINED Crushed Pineapple
mix with INSTANT Pudding, Spread over cake, 12 oz Cool Whip spread over pineapple, Refrigerate till ready to eat..this is YUMMY
ALTERNATE RECIPE
PINEAPPLE GARDEN CAKE - Roma26
I use the 1-pineapple upside down cake mix (Duncan Hines
2-small cans Mandarin Oranges, drained
Follow directions on box of cake mix, except substitute Pineapple Juice drained from pineapple for the water.
Pour into 9 x 13 pan. Bake 350° 35-40 min, cool.
FROSTING:
1 box INSTANT Vanilla Pudding use only 1 1/2 cups milk
Mix 20 oz can WELL DRAINED Crushed Pineapple with INSTANT Pudding.
Spread over cake,
Spread 12 oz Cool Whip over pineapple, Refrigerate till ready to eat...faster easier

PEACH COBBLER CAKE - Roma26
1 box of yellow cake mix
1 32 oz. can of peaches(and liquid)
1/2 cup butter
ground cinnamon
Preheat oven to 350°
Pour peaches in 9x13 pan
cover with cake mix, and press firmly cut butter into small pieces, place on top of cake, sprinkle top with cinnamon. Bake for approx 45 minutes.

CHOCOLATE ORANGE COOKIES - Roma26
3/4 cup margarine
3/4 cups of sugar
1 egg
1 1/2 cups flour
1 tsp baking powder
dash salt
1 tsp vanilla
1 (1 oz) square unsweetened chocolate, melted
rind of 1 orange
Mix all ingredients except chocolate and orange rind. Divide dough in half add orangerind to one, and chocolate to the other. use a little of each to form a ball. Bake 350º 10 min.

LEMON BUTTER - Roma26
1/2 cup sweet butter
1 teaspoon lemon zest
1 T confectionary sugar
1 T lemon juice
To make it Orange butter,
just change lemon ingred.
Same to make Honey butter, etc

CREME FRAISH - Roma26
This is similar to whipped cream,
but the French version:
1 1/2 cups heavy cream
1/2 cup low fat buttermlk
Cover and shake well
Let sit at ROOM temp for 8 hours
Leave 4 days in fridge
Add vanilla and sugar, then beat
It's a sweet and tart cream.

CAULIFLOWER BAKE - Roma26
3-4 bags frozen cauliflower or
2 large heads of fresh (I use fresh)
1/4 cup parmesean cheese
1 cup or more cheddar cheese
1/2 cup of olive oil
34/ teaspoon parsley
1 cup of Bisquick
1/2 teaspoon pepper
4 eggs beaten
1 large onion
Mix all ingreds.
Pour into large 9x13 pan. Sprinkle top with bread crumbs..Bake for 45 minutes at 350°

CORN BREAD - Roma26
1 cup self rising corn bread flour/mix
3 eggs
1 small can cream corn
1/2 cup oil
8 oz. sour cream
Mix all,bake at 400° 20 minutes

SWEDISH MEATBALLS - Roma26
2 lbs ground beef
2-3 oz of cream cheese
1 pkg onion soup mix
2 cups unflavored bread crumbs
1/2 cup milk
Mix all ingreds.
form into balls, and fry.

THICK LEMON CURD - Roma26
3 egg yolks
3/4 cup sugar
zest of lemon
Juice of 2 lemons (6 TBLs)
1/4 cup butter or margerine
In sauce pan, lightly beat yolks; add remaining ingreds. Cook over low heat, stirring constanty, until mixture thickens and boils.
Cool, cover and chill well. Makes about 1 cup.

IRISH SODA BREAD~Roma/Nina
Given to Nina from MaryAnn: This makes a large and dense loaf, excellant and easy!
4 cups flour
1/2 cup sugar
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1/4 cup melted butter
1 1/2 cups raisins
1 1/2 cup milk
1 T vinegar
2 eggs, (1 egg and 1 white of egg)
Mix all ingredients. Add raisens to dry ingred. Grease loaf pan, bake at 400° for one hour..Baste with egg white.

ORANGE SLICE CAKE - Roma26
My all time favorite Christmas Cake:
3 1/2 cups flour
1/2 teaspoon salt
1 cup butter
2 cups sugar
4 eggs
1 teaspoon baking soda
1/2 cup buttermilk
16 ounces orange-flavored fruit slice jelly candies, chopped
1 cup chopped dates
2 cups chopped walnuts
1 cup flaked coconut
topping:
1 cup orange juice
2 cups confectioners' sugar
sift flour and salt together. cream butter or margarine and sugar well. Add eggs, flour mixture, soda, and buttermilk; mix well. Fold in orange slices, dates, nuts, and coconut. Pour batter into a greased and floured tube pan. bake at 300º for 1 3/4 to 2 hours. Remove cake from oven.
Mix together juice and confectioner's sugar; pour over hot cake while still in pan. Cool cake in pan for 20 minutes. Turn out onto cake plate. Cool completely

PUMPKIN CRUNCH ~ Roma/Nina
1 large can of Pumpkin
1 large can of evaporated milk (12-13oz)
1 cup of sugar
2 tsp cinnamon
1 tsp pumpkin pie spice
3 eggs
2 sticks of butter
1 pkg Yellow cake mix
1 cup of nuts, (your choice)
Pre-heat oven to 350° Combine : pumpkin, evapo milk, sugar, spices & eggs. Pour into 9x13 greased pan. Sprinkle top with cake mix and nuts Drizzle melted butter over all. Bake for 50 to 60 minutes. Optional:
Can be flipped over and frosted with cream cheese.
