
SWEET POTATO CUSTARD PIE
1-1/2 cups sugar
1-2/3 cups milk
3 eggs
1/2 teaspoon salt
1/8 teaspoon ground ginger
1 teaspoon grated fresh orange rind
1 cup mashed, cooked sweet potato
1 unbaked 9-inch pie shell
Mix the sugar, milk, eggs, salt, ginger, and orange rind into
the cooked
sweet potato. Scrape into the unbaked pie shell and bake at 350
degrees F
for 1 hour, or until knife inserted in center comes out clean.
(If desired,
serve warm with 1 cup of heavy cream whipped with 1/4 cup of
brandy.)
CHOCOLATE FUDGE PIE
4 ounces unsweetened chocolate, cut into pieces
5 ounces (10 tablespoons) butter
2 large eggs
2 large egg yolks
1-3/4 cups sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup flour
1/4 cup orange juice (see note)
2 tablespoons orange marmalade
1 refrigerated unbaked pie crust, pressed into 9-inch pie
pan
Powdered sugar and whipped cream for serving
Preheat oven to 425 degrees (see note).
Melt unsweetened chocolate and butter in top of a double boiler.
Combine
eggs, egg yolks, sugar, salt, vanilla and flour. Whisk to
combine. Whisk in
orange juice, orange marmalade and reserved chocolate mixture.
Pour mixture
into prepared pie crust. Bake for 25 minutes until puffed, set
and slightly
crusty on top. Cool completely before serving. Sprinkle the pie
with
powdered sugar and serve with whipped cream. Makes 8 to 10
servings.
NOTE
This pie bakes at an unusually high temperature to
create
its
ultra-creamy interior and contrasting crusty exterior.
Substitute
Grand
Marnier for the orange juice, if preferred.
NEW ENGLAND SQUASH PIE
2 cups strained squash
1 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon ginger
salt to taste
3 eggs
2 cups milk
1/2 cup cream
Pie shell for a 10" deep dish pie
Preheat oven to 450 degrees.
Add sugar and seasonings to squash, mix, well.
Beat the eggs slightly, add milk and cream, beat well.
Add milk mixture slowly to squash mixture, beating gently to
combine well.
Pour filling into the shell, being careful not to overfill.
Bake 450 degrees for 10 minutes, then reduce the heat to 325
degrees and
bake for 40 minutes until a knife inserted slightly offcenter
comes out
clean.
NOTE:
"One Pie" brand squash works well, and pumpkin may be
substituted.
BROWNIE BANANA CREAM PIE
Press brownies from 1 pkg (11 0z) Entenmann's Little Bite
Brownies onto
bottom & sides of 9" pan.
Whisk 2 pkgs instant vanilla pudding mix and 1 1/2 c milk til
smooth.
Whisk in 1 jar (6 oz) banana baby food.
Fold in 1 c thawed Whipped Topping.
Slice 1 lb. bananas. Layer bananas & pudding mix in crust
twice.
Chill til
set, 4 hours.
Top with 3 c thawed frozen whipped topping. Garnish with
Brownies & banana
slices.
COCONUT S'MORES BARS
Preheat oven to 350. Line 8" pan with foil, coat with spray.
Mix 1 1/2 c graham cracker crumbs and 1/2 c butter, melted.
Press in bottom
of pan.
Top with:
1 1/2 c mini marshmallows, quartered
brownies from 3 pouches
from 1 pkg (11
oz) Entenmann's Little Bites Brownies,
1/2 c coconut,
1/3 c semisweet chocolate chips.
Pour 1 can sweetened condensed milk over top to cover.
Sprinkle
with 1/2 c
coconut.
Bake 20 min. Cover with foil, bake 20 min. til bubbly. Cool on
rack 30 min.
Using foil, lift from pan, cool. Chill 8 hrs.
GRANGER PIE
Make a pie crust and line 4 pie pans.
Put 1 cupful of baking
syrup in a
bowl, 1 teaspoonful of soda, and 1 cupful of boiling water. Stir
well and
divide in the 4 pans.
Next
take 3 cupfuls of flour, 1 cupful of
sugar, 1/2
cupful of lard, rub well and put over the top of the syrup. Bake
in a
moderate oven.

GRANGER PIE 2
For Topping
1 1/4 C Flour
1/2 C Sugar
1/4 tsp Cinnamon
1/4 C Butter
For Bottom
1/2 C Molasses
1/2 C Boiling water
1/2 tsp Baking soda
Crumb flour, sugar cinnamon and butter. Mix
molasses , water and soda and pour into an unbaked crust. Put
crumbs on top.
Baking time and temperature are not shown in this old recipe. I
used 375
degrees for 35 minutes.
BROWN SUGAR WHIPPED CREAM
In chilled small bowl, beat 1 cup whipping (heavy) cream and 3 tablespoons packed brown sugar with electric mixer on high speed until stiff. Sprinkle ground cinnamon lightly over each serving plate.
MAPLE SUGAR PIE NUTTY SQUASH PIE
NUT COOKIE CRUST
1/2 cup butter or margarine, softened
1/3 cup packed brown sugar
1 1/4 cups flour
1/2 cup chopped nuts
1/2 teaspoon vanilla
1/4 teaspoon salt
1/4 teaspoon baking soda
SQUASH FILLING
2 eggs
1 cup cooled mashed cooked squash
3/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 can (12 ounces) evaporated milk
Heat oven to 425ºF.
CRUST
In large bowl, mix butter and 1/3 cup brown sugar. Stir in all remaining Nut Cookie Crust ingredients just until crumbly. Press crust mixture on bottom and side of ungreased deep-dish pie plate, 9x1 1/2 inches, or regular pie plate, 9x1 1/4 inches, building up 1/2-inch edge (high edge is necessary to prevent filling from running over).
FILLING
In large bowl, beat eggs slightly. Stir in all remaining Squash Filling ingredients except milk until smooth. Gradually stir in milk. Pour into crust. Cover edge with 2- to 3-inch strip of foil to prevent excessive browning.
Bake pie 15 minutes. Reduce oven temperature to 350ºF. Bake 45 to 55 minutes longer or until knife inserted near center comes out clean. Cool completely on wire rack, about 2 hours. Store covered in refrigerator.
SUBSTITUTION
Use mashed cooked sweet potatoes or pumpkin for the squash.
TOPPING
Crown this pie with Brown Sugar Whipped Cream.
To make, in chilled small bowl, beat 1 cup whipping (heavy) cream and 3 tablespoons packed brown sugar with electric mixer on high speed until stiff. Sprinkle ground cinnamon lightly over each serving plate.
MARY'S PINEAPPLE FLUFF PIE
2 small boxes instant vanilla pudding
1 reg size can crushed pineapple
8 oz. cream cheese (softened)
1 graham cracker pie crust
Mix the pudding, cream cheese and pineapple (including the juice)
Pour into pie crust and refridgerate a couple of hours.
VARIATION
It would be good with Coconut pudding also.
best part is only 1 bowl
