PEANUT BUTTER SILK CAKE~Pat Dotson
1 box Supermoist yellow cake mix ( butter recipe)
1 1/4 cups water
1/2 cup Jif peanut butter
1/2 cup softened butter
3 eggs
PEANUT BUTTER FROSTING:
2 cups powdered sugar
1 egg white
1/2 cup Crisco shortening
1 TBSP butter
1 TBSP vanilla
2 TBSP flour
1 TBSP milk
4 heaping TBSP Jif peanut butter
In a mixer add cake mix, water, 1/2 cup peanut butter, 1/2 cup butter and 3 eggs--beat on low until mixed, then beat on medium for 2 minutes.
Pour batter into a greased 9 x 13 cake pan. Bake at 350 degrees for 30-35 minutes or until inserted toothpick comes out clean. Cool completely.
In a mixer beat egg white and 1 cup of the powdered sugar for one minute.
Add Crisco, 1 TBSP butter, vanilla, flour and milk--beat well.
Add the second cup of powdered sugar and beat.
Add peanut butter and beat until light and fluffy.
