RECIPE FOR A HAPPY NEW YEAR 1
To leave the old with a burst of song,
to recall the right and forgive the wrong.

To forget the thing that binds you fast
to the vain regrets of the year that's past.

To have the strength to let go your hold
of the not-worthwhile of the days grown old.

To dare to go forth with a purpose true,
to the unknown task of the year that's new.

To help your brother along the road,
to do his work and left his load.

To add your gift to the world's good cheer,
is to have and to give a Happy New Year.

RECIPE FOR A HAPPY NEW YEAR 2

Take twelve whole months.
Clean them thoroughly of all bitterness,
hate, and jealousy.
Make them just as fresh and clean as possible.

Now cut each month into twenty-eight, thirty, or
thirty-one different parts,
but don't make up the whole batch at once.
Prepare it one day at a time out of these ingredients.

Mix well into each day one part of faith,
one part of patience, one part of courage,
and one part of work.
Add to each day one part of hope,
faithfulness, generosity, and kindness.
Blend with one part prayer, one part meditation,
and one good deed.
Season the whole with a dash of good spirits,
a sprinkle of fun, a pinch of play,
and a cupfull of good humor.

Pour all of this into a vessel of love.
Cook thouroughly over radient joy,
garnish with a smile,
and serve with quietness, unselfishness,
and cheerfulness.
And your bound to have a
HAPPY NEW YEAR.


APPLE-GARLIC LOAVES
3 medium Granny Smith apples (about 1 lb.), cored
1 tablespoon butter
4 large cloves garlic, coarsely chopped
1/2 cup quick-cooking or regular rolled oats
1/2 cup packed brown sugar
1 tablespoon lemon juice
2 20-ounces loaves purchased ciabatta bread or other crusty bread
3 tablespoons butter, melted
Thinly slice one and a half of the apples; coarsely chop remaining apples. In a large skillet melt the 1 tablespoon butter. Add apples, garlic, and oats. Cook over medium heat for 5 to 8 minutes or until apples start to soften, stirring occasionally. Remove from heat; stir in brown sugar and lemon juice. Use immediately to top bread. Or transfer to a medium bowl; cover and chill up to 24 hours. Preheat oven to 375 degree F. Place loaves on a large baking sheet.* Brush tops of loaves with melted butter. Spoon half the apple mixture onto each loaf, pressing mixture in slightly. Bake, uncovered, for 10 minutes or until warmed through. Transfer to a cutting surface. Slice carefully to avoid dislodging apples. Makes 24 servings.
*Note:
If the loaves do not have flat tops, slice off the rounded portions to make flat surfaces.

WALNUT-SAGE POTATOES AuGRATIN
6 medium potatoes (2 lb.)
1/2 cup chopped onion
2 cloves garlic, minced
3 tablespoons walnut oil
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups milk
3 tablespoons snipped fresh sage
4 ounces Gruyere cheese, shredded (1 cup)
1/3 cup broken walnut pieces
Fresh sage leaves (optional)
Peel potatoes, if desired, and thinly slice (should have 6 cups). Place slices in a colander. Rinse with cool water; set aside to drain. For sauce, in a medium saucepan cook onion and garlic in walnut oil until tender but not brown. Stir in flour, salt, and pepper. Add milk all at once. Cook and stir over medium heat until thickened and bubbly. Remove from heat; stir in snipped sage.((end here for microwave, continue as below) Grease a 2-quart round casserole (with glass cover). Layer half of the potatoes in casserole. Cover with half the sauce. Sprinkle with half the cheese. Repeat layering with the potatoes and sauce. (Cover and chill remaining cheese until needed.) Bake casserole, covered, in conventional oven at 350 degrees F for 40 minutes. Uncover; bake 25 minutes more or until potatoes are just tender. Sprinkle remaining cheese and nuts over top. Bake, uncovered, 5 minutes. Let stand 10 minutes. Top with sage leaves.
Microwave oven method:
Using a microwave-safe casserole, assemble ingredients through Step 3. Cover with plastic wrap, turning back an edge of wrap to allow steam to escape. Microcook on 70% power (medium-high) for 25 to 30 minutes or until potatoes are tender. Uncover; sprinkle remaining cheese and walnuts over top. Cover and let stand 5 minutes. Top with sage leaves.

MOCK LOBSTER
1-1/2 to 2 pounds frozen cod or haddock fillets, partially thawed
1-1/2 teaspoons salt
2 teaspoons seafood seasoning or paprika
3 tablespoons vinegar
Melted butter or margarine
Lemon wedges
Cut fillets into 2-in. x 2-in. pieces; place in a skillet. Cover with water. Add salt and seafood seasoning; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Drain. Cover with cold water. Add vinegar and bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Drain. Serve with melted butter and lemon. Yield: 4-6 servings.

NEW YEAR'S MONEY AND LUCK SOUP
Soak black eye peas overnight.
Cover a ham bone with water; boil and let reduce. Add black eye peas and let simmer for about 4 hours.
About 1 hour into cooking, chop up an onion and add to soup along with with garlic powder or 1/2 tsp chopped garlic. Reserve some chopped onion for last ten minutes of cooking when you will see meat fall off bone. Do NOT add extra salt, the ham seasons the soup.
The last 40 minutes of cooking add a large can of whole tomatoes chopped in quarters.
Twenty minutes before soup is finished add a bunch of fresh spinach or well drained frozen leaf spinach. Maintain some crunch in spinach.
The last 10 minutes of cooking add the reserved chopped onions.
Serve hot. Soup ages well and flavors meld together even better. May stored in the refrigerator up to 2 days or frozen for longer storage.

DEEP FRIED NEW YEAR'S COOKIES
"Deep fried balls of dough rolled in cinnamon sugar are a New Year's Day tradition in many parts of Italy. Serve these doughnut-like treats for breakfast. They also make a festive dessert."
1/2 cup plus 1 tablespoon sugar, divided use
1 teaspoon ground cinnamon
1 cup warm water (105-110 degrees F)
1 package (2 1/4 teaspoons) active dry yeast
1 1/2 cups unbleached all-purpose flour
1/2 teaspoon salt
4 cups vegetable oil or canola oil for frying
Combine 1/2 cup of sugar and the cinnamon in small bowl. Set aside.
Pour warm water into large mixing bowl and sprinkle with yeast. Let stand 5 minutes to dissolve. Stir in flour, salt and remaining 1 tablespoon sugar until very wet dough forms. Cover bowl with plastic wrap and let rise at room temperature until it has puffed up and doubled in size, about 45-60 minutes.
Heat oil in large, deep pot to 365 degrees F. Line a rimmed baking sheet with paper towel. Spread cinnamon sugar mixture on another rimmed baking sheet.
Dip soup spoon into hot oil and use oil-coated spoon to scoop up a heaping spoonful of dough. Use another soup spoon to scrape the dough into the pot. Repeat with as many spoonfuls as will fit comfortably in the pot without touching each other. Fry, turning once, until the cookies are golden, 1 to 1 1/2 minutes. Remove with slotted spoon and let drain on paper-towel-lined rimmed baking sheet.
After all the cookies have been fried (and while they are still warm), transfer them to the sheet with the cinnamon-sugar and roll them in sugar to coat. Serve immediately. Makes about 18 puffed cookies

ORANGE SLUSH
3 cups water
3 cups sugar
Boil 2-3 minutes, stir until syrupy.
Let cool.
1 large can crushed pineapple
1 large can frozen orange juice concentrate
1 large can water that the orange juice was in
6 finely chopped bananas
1 bottle maraschino cherries
1 can mandarin oranges
Freeze. Serve slushy
