VARIATIONS of PEANUT BUTTER MUFFINS
PEANUT BUTTER & JELLY SURPRISE MUFFINS
Hidden inside is your child's favorite jelly
1 3/4 cups flour
1/3 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup creamy peanut butter
1 large egg
3/4 cup milk
1/3 cup butter, melted
1/2 cup strawberry, raspberry, or grape jelly
Preheat the oven to 375º. Line a muffin tin with muffin papers. Combine flour, sugar, baking powder, and salt. Mix peanut butter with the egg. Add milk, a little at a time, then add butter and mix. Pour the wet batter into bowl with the dry ingredients and stir gently to combine. Batter will be stiff.
Put a heaping tablespoon of batter in bottom of each muffin cup. Use finger to make an indentation, put a teaspoon of jelly in hole. Cover with enough batter to fill each cup about two-thirds full. Spread batter gently until no jelly is visible. Bake for 20 minutes, turn muffins onto a wire baking rack to cool, the jelly centers can get hot. Makes 12 muffins.
PEANUT BUTTER CHOCOLATE CHIP MUFFINS
2/3 cup peanut butter
2 tablespoons margarine -- melted
3/4 cup sugar
2 eggs
1-1/2 teaspoon vanilla
1-1/2 cups flour
1-1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup milk
1 cup (6-oz chocolate chips
Preheat oven to 350º. Combine peanut butter and margarine until well blended. Mix in sugar, eggs, and vanilla. Combine flour, baking powder and baking soda. Add to peanut butter mixture along with milk and chocolate chips. Mix well. Spoon into 12 lined muffin tins. Bake for 20 to 25 minutes or until muffins spring back when touched lightly in the center.
CHOCOLATE PEANUT BUTTER MUFFINS
½ cup quick-cooking oats
1/4 cup margarine, softened
1/2 cup applesauce
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
3/4 cup flour
1/4 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup peanut butter baking chips
Combine margarine, sugars, egg and vanilla. Blend until well combined. Add applesauce and oatmeal, blend again. Stir in flour, cocoa powder, baking soda and cinnamon. Stir until just blended. Fold in peanut butter chips. Line muffin tins with paper liners, then fill 3/4 full with batter. Bake at 350º for about 23 minutes. Cool slightly.
PEANUT BUTTER MUFFINS
2 eggs
1 cup milk
1/4 cup banana (about 1 banana), mashed
1/4 cup peanut butter
1/3 cup vegetable oil
1/4 cup frozen apple juice concentrate, thawed
1/4 cup nonfat dry milk
2 1/4 cups flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
Preheat oven to 350º. In a bowl, break eggs, beat them a little bit. In a bowl, combine milk, mashed banana, peanut butter, vegetable oil, apple juice, dry milk, and eggs. Mix mixture is creamy. Add flour, baking powder, and baking soda. Mix again. Line muffin tin with liners or lightly spray with nonstick spray. Spoon in the muffin mix. Fill each muffin cup about 2/3 of the way up. Bake for about 15 minutes, remove from muffin tin and cool
PEANUT BUTTER MUFFINS
2 c Flour
1 T Baking powder
1/3 c Sugar
1 tsp Salt
2 Eggs
1/4 c Peanut butter
2/3 c Milk
1/2 c Water
2 T Butter; melted
Sift together flour, baking powder, salt and sugar. Beat eggs; add peanut butter, milk, water and butter; beat well. Add peanut butter mixture to four mixture, beating only until blended. Grease muffin tins and fill 2/3 full. Bake in 400º oven for about 20 minutes. Serve with peanut butter and grape jelly
ORANGE PEANUT BUTTER MUFFINS
1 cup orange juice
3/4 cup peanut butter
1/3 cup honey
1/4 cup orange marmalade
1/4 cup oil
1egg
1 3/4 cups flour
1 T baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
preheat to 400º. Blend orange juice, peanut butter, honey, orange marmalade, oil and egg in a bowl until smooth. Combine flour, baking powder, baking soda and salt. Stir into peanut butter mixture just until mixed. Spoon into greased or paper lined muffin cups. Bake 20 - 25 minutes. Cool on rack. Makes 12 muffins
