2 cups mashed potatoes
2 eggs(beaten)
chopped onion to taste (optional
Mix potatoes, onion and eggs.
If too runny, add some flour
Drop by tablespoon into hot oil, Fry until brown.
SHRIMP MOLD - Mary/marmac34
1 (8 oz.) pkg. cream cheese
1 can tomato soup, undiluted
1 pkg unflavored gelatin, mix from directions on pkg
1 can cocktail shrimp
use liquid from shrimp for mixing Gelatin
DO NOT put Green peppers in, as that's all you'll be able to taste. 1/2 c. chopped green onion(optional
3/4 - 1 c. chopped celery
Dissolve cream cheese in tomato soup in top of double boiler. Drain shrimp, reserving liquid. Add shrimp and celery, to soup mix. Fold in gelatin. Pour in mold. Let cool uncovered. then cover & chill overnight in refrigerator. Serve with crackers or chips. Can be used as a Salad, or for sandwiches.
PIEROGIES & CHICKEN - marmac34
this recipe can be doubled
12 Pierogies, thawed, layer on bottom of greased baking pan
put on top - 2 c diced Chicken
then, 1 pkg frozen mixed vegetables
pour 2 jars chicken gravy over top.
Bake 350º 45 min. last 20 min, sprinkle with French Fried Onions
SWEET-SOUR-MEATBALLS Marmac34
1 egg, beaten
1 can whole cranberry sauce (8 oz.)
1 c soft bread crumbs
1/2 c bottled barbecue sauce
2 T chopped onion
Dash black pepper
2 T milk
1 T Cornstarch
3/4 tsp Salt
1/4 c cold water
1 lb. Ground beef
1/2 c green pepper strips
Hot cooked rice (white)
2 T shortening
1 can pineapple tidbits (8 oz)
Combine eggs, breadcrumbs, onion, milk and salt. Add meat mixture and mix well. Shape into balls about 1-inch in diameter. In a large skillet, heat shortening and brown meatballs. Drain off excess fat. Drain pineapple, reserve syrup.
Add water to reserved syrup to make 3/4 cup. Combine syrup mixture, cranberry sauce, barbecue sauce and pepper. Pour over meatballs in skillet and bring to a boil. Reduce heat; cover; simmer for 15-20 minutes. Combine cornstarch with cold water. Stir into skillet with meatballs. Cook and stir gently until thick and bubbly. Add pineapple tidbits and green pepper. Simmer, covered, until pepper is barely tender. Serve over hot cooked rice.
About 6 servings.
SWEDISH MEATBALLS - Mary/marmac34
1 egg, beaten
2 c soft bread crumbs
1 chopped onion
1 1/2 lb. Ground beef
1/2 lb. ground Pork (can use 2 lbs gr. Beef)
3/4 c milk
2 T marg.
2 T flour
1/4 to 1/2 tsp nutmeg
mix, then shape into balls, put in casserole dish.
add 1 can beef consume
1/2 c milk or light cream
cover, bake 350º for 1 hr
if needed, add a little water or milk.
HOMEMADE ICE PACK
4 envelopes unflavored gelatine
1/2 c water
2 c alcohol (rubbing
blue food coloring
dissolve gelatine in water, blend in alcohol & coloring. put in zip - lock type bags, store in freezer. can be reused.
Sausage Stuffed Squash - Mary Jones
1/2 lb. Sausage
2 Acorn squash, halved, seeded
1 c seasoned bread crumbs
1/2 med. onion, chopped fine
1/2 c chopped celery
8 oz crushed pineapple, drained
water
1 T margarine
pepper to taste
Place squash, halves cut side down in roasting pan, add water to about 1/4 in. deep. Bake 400º 25 min. Remove from oven, turn squash cut side up in pan, brush edges with margarine In skillet, saute' sausage, onions, celery til lightly brown, drain, add crumbs, pineapple, pepper. Spoon into squash. bake 25 min.
CREAM CHEESE BREAD - Mary
1 cup sour cream
1/2 cup sugar
1 tsp salt
1/2 cup butter, melted
2 pkgs active dry yeast
1/2 cup lukewarm water
2 eggs, beaten
4 cups flour
For the cream cheese filling:
2 pkgs (8 oz each) cream cheese, softened
3/4 cup sugar
1 egg, beaten
1/8 teaspoon salt
2 tsps vanilla
For the glaze:
2 cups powdered sugar
1/4 cup milk
2 tsps vanilla
Heat sour cream in saucepan over low heat. Add sugar, salt, and butter. Let cool to lukewarm. Sprinkle yeast over warm water in large mixing bowl, stirring to dissolve. Add sour cream mixture, eggs and flour, mixing well. Chill dough, tightly covered, overnight. Divide dough into 4 equal portions. On a well-floured surface, roll each portion into a 12 by 28 inch rectangle. Prepare the filling by combining cream cheese, sugar, egg, salt and vanilla, blending until smooth. Spread 1/4 of cream cheese filling on each rectangle of dough. Beginning at long edge, roll up, jelly roll fashion. Pinch seam to seal and tuck ends under. Place rolls, seam side down, on greased baking sheets. Cut slits about 2/3 of the way through the rolls at 2 inch intervals. cover and let rise in a warm place, free from, for about 1 hour or until doubled in bulk. Preheat oven to 375°. Bake the rolls for 12 to 15 minutes. Prepare the glaze by combining powdered sugar, milk and vanilla, blending until smooth.
Spread glaze over warm> loaves. Makes 4 loaves

1 lb frozen Haddock (DO NOT thaw, cut in small pieces, set aside
mix and heat to a boil
2 c water
1 tsp vinegar
1/2 tsp salt
1/2 tsp seafood sasoning
drop fish in boiling mix, bring to a boil again, simmer for about 20 min, drain
BUTTERSCOTCH BUBBLE BREAD - Mary/marmac34
1 bag (14 in pkg) frozen dinner rolls
1/2 c sugar
1 1/2 tsp cinnamon (I also add 1/4-1/2 tsp nutmeg)
1/2 cup crushed walnuts
1/2 c raisins
1/2 c brown sugar
1 sm. pkg Butterscotch pudding (not Instant
1 1/2 sticks margarine
spray an angel food or bundt pan
mix spices, white sugar, set aside, mix brown sugar and dry pudding, set aside, (I cut each roll in thirds or half. You can use whole, place in pan in layers of rolls, then sprinkle some sugar and spices mix, then some nuts and raisins, on TOP put br. sugar, pudding mix, slice margarine in thin pats, put over top. cover with cloth, let stand overnight. bake 350º 30 min. invert on plate, let stand for 10 min. before removing pan. Serve by by pulling off a ball, to make it fancy, put some cherries in pan and slivers of nuts BEFORE putting in the rolls
FRUIT MEDLEY PUNCH - Mary/marmac34
6 oz. frozen pineapple-orange-banana juice
6 oz. frozen lemonade (can us any flavor
1/4 cup sugar
6 oz. water
20 oz. ginger ale
Orange slices for garnish (can use lime, lemon slices
mix all juices in container. Add sugar and water, stir.
Just before serving, add ginger ale.
Pour over ice cubes and garnish with orange slices. can make an ice mold with fruit juices.
