MARY'S RECIPES (marmac34/nynana34)


BREAD PUDDING - Mary
heat to scalding- 2 cups milk
pour over- 4 cups bread crumbs [I use 6 c cubed bread
cool, then add-
1/4 c butter
1/2 cup sugar
2 eggs, slightly beaten
1 tsp vanilla [optional
1/4 teaspoon salt
1/2 - 1 cup golden raisins
1 tsp cinnamon or nutmeg [I use 1 tsp of each
Preheat oven to 350°, pour in a buttered 1 1/2 qt. dish. Sprinkle nutmeg on top. Bake 40 - 45 min or until knife inserted comes out clean. Serve warm, with Hard sauce or cream.
CUSTARD BREAD PUDDING
follow recipe above except increase milk to 4 cups: use only 2 cups bread crumbs.

CRANBERRY APPLE RELISH SALAD - nynana34/marmac34
2 c raw chopped cranberries
2 cups diced Tart apples
2 cups sugar
2 c diced celery
2 c chopped walnuts
1 pkg Strawberry Jello
1 pkg. Orange Jello
3 c hot water
mix jello and water, refrigerate till starts t set. mix cranberries & sugar. When jello is set, add cranberries and all remaining ingredients

NO BAKE - SHOESTRING POTATO COOKIES - Mary
3 T plain or chunky peanut butter
2 6 oz pkg Butterscotch Chips
1 4 oz can Shoestring Potatoes
1 c nuts
melt chips and peanut butter, pour over Potatoes and nuts. mix Drop by teaspoonful on waxed paper. put in feezer to set, remove as soon as firm.

MEATLOAF WITH A SURPRISE - Mary
2 pound ground beef
1 cup or one pack of diced and shredded Cheddar cheese
2 eggs beaten
1 small onion, chopped
1 small bell pepper,chopped (optional
1 stalk celery, diced
1/4 cup bread crumbs
1 T mustard
3 T ketchup
Mix ground beef, onion, bell pepper, celery, bread crumbs, mustard, ketchup. Press half mix into pan, add cheese, leaving 1/2 inch from edge with out cheese. Add remaining meat mix, seal edges by pressing down. Bake in 350º oven 45 min. in place of cheese, you can put Hard Boiled eggs down center, then cover with remaining meat.

OLD ENGLISH MINCEMEAT - Mary
1/2 lb beef suet, chopped fine
2 cups reg. raisins
2 cups white raisins
2 cups dried currants
1 cup coarsely chopped nuts (I use walnuts)
1/2 cup coarsely chopped candied mixed peel or fruit
1/2 cup coarsely chopped dried figs
1/2 cup coarsely chopped candied orange peel
1/4 cup coarsely chopped candied lemon peel
4 cups coarsely chopped, peeled and cored cooking apples
1 1/2 cup sugar
1 tsp nutmeg
1 tsp allspice
1 tsp cinnamon
1/2 tsp cloves
1 1/2 - 2 cups brandy, whiskey OR rum
Combine the suet, raisins, currants, nuts, citron, figs, orange peel, lemon peel, apples, sugar, nutmeg, allspice, cinnamon and cloves in a large mixing bowl, and stir them together thoroughly. Pour in the brandy and stir with a large spoon until all the ingredients are moist, then put all through a food grinder. mixture will keep for a long time if stored in sterilized jars. If it becomes to dry, moisten with brandy, whiskey, rum, or fruit juice.

FUNNEL CAKES - Mary/marmac34
These are those squiggly confections that make the air smell mmmmmm sooooo good at the fairs and taste just as good.
1 1/3 cups flour
2 tablespoons sugar
3/4 tsp baking powder
1/4 tsp salt
1/2 tsp soda
1 egg, beaten
2/3 cup milk, or more as needed
oil for frying
powdered sugar
Mix and beat until smooth. Fill a skillet or pan with 1 inch of cooking oil and heat to a temperature of 375º. Now cover the small hole of a clean funnel with a finger. Then fill the funnel with the batter. Carefully move your finger away from the hole in the funnel, allowing the batter to flow into the skillet. Move the funnel to form patterns with the batter. Fry until golden brown, about 1 or 2 minutes, turning once with two spatulas. Remove to paper toweling to drain. Place on a plate and sprinkle with powdered sugar. ( I lkie to add nutmeg or cinnamon to the powdered sugar) Serve hot. Repeat the process until all of the batter is used up.
To make a camping mix, mix the dry ingredients and put them into a ziplock bag with a copy of this recipe. When at your campsite just add egg and milk and there you are. If you are not planning to pack milk, put about 1/4 cup of pwdered milk in the dry ingredients and then use water instead of milk.

ZUCCHINI RELISH - Mary
10 cups coarsely ground zucchini.
Use only the firm fleshy part of the zucchini and discard the spongy, seedy part if you're using larger zucchini.
4 cups chopped onion
4 T salt
In large mixing bowl, mix above ingredients together and stir. Let stand overnight. Transfer to colander and drain. Rinse in cold water. Squeeze out excess water and place in a large pot, then add:
2 1/4 cups vinegar
2 tsp. celery seed
1 tsp. black pepper
1 T. nutmeg
1 T. turmeric
2 T. cornstarch
6 cups sugar
Bring to a very low boil, reduce heat and cook gently for 30 minutes, then add:
2 cups chopped celery
1 cup chopped green bell pepper
Cook an additional 30 minutes. Spoon into pint jars and process in a boiling water bath for 15 minutes. Yields 7 1/2 pints.

CHOCOLATE RAISIN BREAD PUDDING - Mary
4 large eggs
1 cup whole milk
1 cup heavy cream
1 cup half-and-half
1 cup sugar
1/4 cup unsweetened cocoa powder, sifted
1 T vanilla
1/2 teaspoon salt
8 cups 1-inch cubes of bread,
1/2 cup semisweet chocolate chips
1/2 cup golden raisins
Preheat oven to 350°, beat together eggs, milk, cream
half-and-half, sugar, cocoa, vanilla, and salt in a large bowl. Stir in bread until coated and let stand 5 minutes, Stir in chocolate chips and raisins, pour pudding to a buttered 13 x 9 inch pan. Bake pudding in a pan of water in middle of oven until custard is just set about 40 minutes. Serve warm.

POPCORN COOKIES - Mary
4 teaspoons margarine, melted
1 1/2 cups minced popped corn
2 egg whites
2/3 cup of sugar
1/2 teaspoon salt
1 teaspoon vanilla
blanched, toasted almonds
Add margarine to popped corn. Beat egg whites until stiff. Add sugar gradually. Add to corn mixture. Add salt and vanilla. Drop mixture from teaspoon onto greased cookie sheet. Shape into rounds. Decorate with nuts. Bake at 325° for 7 minutes.

JELLO COOKIES - Mary
2 1/2 c flour
1 tsp baking powder
3/4 c butter
1/2 c sugar
1 (3 oz) pkg Jello, any flavor
2 eggs
1 tsp vanilla
salt
Sift flour and baking powder; cream butter, gradually add sugar and Jello. Cream well after each addition. Add eggs and vanilla. Beat well. Gradually add flour mixture. Drop by teaspoon or roll into balls and press down with Jello coated press (bottom of glass or patterned cookie press). Bake at 350º 10 minutes.

BIG NOTHINGS - Mary/marmac34
5 eggs (lightly beaten)
4 T sweet corn
pinch salt
mix together
put flour on what you are using to roll out the dough.
roll out dough very thin (it will blister). cut dough in different shapes & sizes
Fry in hot grease. sprinkle with sugar.

5 CUP SALAD - Mary/marmac34
1 c coconut
1 c mandarin oranges
1 c crushed pineapple
1 c miniature marshmllows
1 c sour cream
mix all together. chill before serving.
