BLACKBERRY OR STRAWBERRY ROLL - LeighT120
2 c. flour
3/4 c. cold milk
2 tsp. baking powder
1 c. sugar
1 T sugar
2 T butter
1/2 tsp. salt
3 c. berries
1/3 c. shortening
Sift flour, 1 T. sugar, baking powder, salt and shortening together. Add milk to make a soft dough. Roll on floured board to 1/2 in. thickness.
Place berries in bowl, add to them the cup of sugar mixed with 1 T. flour. Brush dough with melted butter, place berry and sugar mixture on dough roll up as tight as possible. Pinch the edges together, using fork dipped in flour. Bake in greased pan at 450° until berries are tender and crust a rich brown. Delicious when served warm and topped with vanilla ice cream.
MONKEY BREAD - LeighT120
1 c. sugar
nuts
2 tsp. cinnamon
raisins
3 cans (10-count) buttermilk biscuits
1 stick margarine
1 c. brown sugar
Place canned biscuits in freezer for 15 min. Remove from freezer and cut into quarters. Shake biscuit quarters in sugar and cinnamon mixture. Grease and flour tube pan. Layer biscuits in pan with nuts and raisins between layers. Cook margarine and brown sugar in saucepan for 1 min. Pour over all and bake at 350° for 30 min. Break off pieces to eat.
BANANA NUT BREAD - LeighT120
2 c. sugar
1½ tsp. baking soda
3 c. flour
½ c. oil
2 eggs
pinch of salt
2/3 c. milk
4 bananas
½ c. walnuts
Mix sugar, baking soda, flour, oil, eggs, salt and milk in order given. Mash bananas very well. Add bananas and nuts to mixture. Grease and flour two loaf pans and poor mixture in. Bake for 1 hour 350°
BARBECUE - LeighT120
Finely dice up leftover pork roast.
Boil bone with 1 c. water and a little salt.
Add diced meat,
1/4 c. vinegar,
celery seed,
1 bay leaf,
hot sauce to taste and/or dried crushed red peppers and a little paprika. Tilt lid on pan and simmer one hour. If pan boils dry, add a little more water.
LEMON BARS - Leight120
1 c. soft margarine
1/2 c. powdered sugar
2 c. flour
dash of salt
4 eggs, beaten
2 c. sugar
1/4 c. flour
6 T lemon juice
CRUST
1 c. margarine,
1/2 c. powdered sugar
2 c. flour
salt.
Mix well Press into 9x13 pan.
Bake at 350° for 15 min. or until lightly browned.
FILLING
1/4 c. flour
2 c. sugar.
Mix in beaten eggs
6 T lemon juice.
Pour into slightly cooled crust.
Bake at 350° for 25 min. or until set.
CHOCOLATE FUDGE - LeighT120
4 1/2 c. sugar
1 lg. can Carnation milk
1 stick butter
18 oz. chocolate chips
1 T vanilla
1 c. nuts
Boil sugar and evaporated milk together for 6 minutes, counting AFTER mixture comes to a full boil. Stir constantly in a large pan during this step. Add 1 stick butter, 1 T vanilla, 1 cup nuts and 18 oz. chocolate chips. Mix well. Pour immediately into a buttered pan and put in cool place to harden. Makes about 5 pounds.
CRAB MELTAWAYS - LeighT120
6 English muffins
6 oz. can of crab meat
5 oz. Old English cheddar cheese
1 stick margarine, softened
2 T mayonnaise
1/2 tsp. seasoned salt
1/2 tsp. garlic powder
1/2 tsp. Old Bay Seasoning
Combine ingredients. Split muffins in half, spread mixture, sprinkle with paprika, then divide into quarters. Place on cookie sheet and quick freeze, will keep for months. Broil for 7-8 minutes until golden before serving.
