
CREAMED SPINACH~Jean
1 large onion, finely chopped
4 green onions, finely chopped
4 bacon strips, diced
1 garlic clove, minced
2 tablespoons plus 2 teaspons butter
1/2 cup all-purpose flour
1-1/4 teaspoons salt
1/4 teaspoon pepper
1-1/2 cups milk
3 packages (10 oz. each)
frozen chopped spinach,
thawed and squezed dry
1/2 cup half-and-half cream
In large skillet, cook the onions, bacon and garlic in butter over
medium heat until bacon is crisp. Stir in flour, salt and pepper until
blended. Gradually add milk.
Bring to boil, cook and stir for 2 minutes or until thickened. Stir in
spinach and cream, cook 3-5 minutes or until spinach is heated
through.....6 servings
BANANA BREAD W/VANILLA PUDDING MIX~Jean
2 1/2 cups all-purpose flour
1 1/4 cups sugar
2 pkgs. (3.4 oz. each) instant vanilla pudding mix
1 1/4 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinammmon
5 eggs
2 cups mashed bananas (4-5)
1 cup vegetable oil
1 teapoon vanilla
1 cup chopped nuts (optional)
In large bowl, combine the first six ingredients...I mixed these
together with a spoon before adding.
In a mixing bowl, beat the eggs, bananas, oil and vanilla (I used a
mixer for this).
STIR in the dry ingredients to the egg mixture just until moistened. Add
nuts if desired.
Bake in two greased loaf pans at 350° for 55-65 minutes, or until a
toothpick comes out clean. Cool 10 minutes before removing from pans.
BEER BREAD~Jean
3 cups self-rising flour
2 tablespoons vineger
Can beer
Mix and put in 2 pans, drizzle 1/2 c. melted butter over the top.
350° - 50 minutes.
SQUASH CASSEROLE~Jean H
6 cups sliced squash
Boil with 1/4 cup onion for 5 minutes.
Drain well.
1 can Cr. of Chiken soup
1 cup sour cream
1 cup shredded carrot
1 cup fine stuffing mix
1/2 cup oleo, melted
Melt oleo and add stuffing.
put half of stuffing in pan, add
squah mixture. add remaining stuffing,
bake 25-30 min., 350°...
optional
can add cubed chicken if you want.
CHICKEN & RICE BAKE~Jean H
1 cup raw rice
1 can cream of mushroom soup
1 can cream of chicken soup
1 can milk
4 or 5 boneless, skinless chicken breasts
1/2 pkg. dry onion soup mix
In a flat pyrex baking dish, (greased), sprinkle the cup of raw rice
over the bottom.
Mix the soups and milk and pour over the rice. (I sometimes heat this
first).
Put chicken breasts on top
Sprinkle dry onion soup mix on top
Cover tightly with foil and bake at 350° for 2 hours.
