ORANGE SALAD ~ mbcfuller
1 3 OZ. package orange jello
2 pkgs. vanilla tapioca pudding
3 c boiling water
combine above ingredients. Cool in refrigerator, stirring every 20 min. When mix starts to jell, stir in:
1 carton Cool Whip
1 can crushed pineapple, drained
1 can mandarin oranges, drained
nuts, optional
BAKED FRENCH TOAST W/APPLES & CRANBERRIES ~ Janice/ca36
1/3 cup Maple Syrup
2/3 cup light brown sugar
1 stick unsalted butter, melted
3 teaspoons ground cinnamon
1/4 teaspoon nutmeg
3 tart apples, peeled,cored, and thinly sliced
1/2 cup dried cranberries
1 pound loaf of egg enriched bread (such as Challah or Brioche)
6 large eggs
1 1/2 cups milk
1 tablespoon vanilla extract
Blueberry or maple syrup
In a large bowl, combine the maple syrup, brown sugar,1 teaspoon of the cinnamon, nutmeg and the melted butter.
Add the apple slices and cranberries and gently stir to
combine. Lightly butter a 9" X 13" glass baking dish, and spread the apple mixture over the bottom of the dish.
Trim a good piece off each end of the bread and then slice into 1" slices. Place the bread over the apple mixture, slightly overlapping the slices to fit. In a medium bowl, blend the eggs and rest of the cinnamon, and then add the milk and vanilla, stirring just
to combine. Pour this mixture over the bread, soaking the
bread completely. Cover the pan with a piece of aluminum
foil and refigerate overnight, or up to 24 hours.
When ready to bake, preheat the oven to 375 degrees. Bake
covered for 4o minutes. Uncover the pan and bake for an additional 5 minutes. Cut into serving pieces and serve warm with heated syrup.
DUTCH APPLE BREAD ~ Diana/nicelady2no
Cream together
1/2 cup of butter
1 cup of sugar.
Add 2 large eggs
1 tsp. vanilla
Beat well, then add
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
alternately with 1/4 cup buttermilk
Fold in 1 cup
chopped
apples and 1/4 cup chopped walnuts.
Pour into greased 9x5x3 inch loaf
pan.
TOPPING
1/3 cup flour
2 Tbs. sugar
2 Tbs. brown sugar
1/2 t cinnamon
1/4 cup butter
Combine and crumble over batter.
Bake 55 minutes at 350 degrees.
NEEDHAMS W/CHOCOLATE DIP ~ Jane/jhb1006
Many old-time Maine cookbooks feature recipes for needhams or "potato candies
3/4 cup mashed potato
2 pounds powdered sugar
1/4 pound butter
1/2 pound flaked coconut
2 teaspoons vanilla
Pare and cook the potatoes to make 3/4 cup. In a double boiler on top of the stove, melt the butter over boiling water. Add the mashed potato, powdered sugar, flaked coconut and vanilla.
Mix well. Spread the mixture evenly in a buttered cookie sheet. Place in a cool place to harden—a cool garage or back porch in the winter works well. When hard, cut the mixture into small squares and dip in the chocolate mixture.
CHOCOLATE DIP
12 ounces semi-sweet chocolate
4 ounces unsweetened chocolate
1/2 cake paraffin wax
Melt the paraffin in the bowl of the double boiler. Add the chocolates and melt. Stir well. Dip the needham squares in the chocolate and place on waxed paper to harden. Makes 66 good-sized needhams. The recipe may be cut in half.
SAUSAGE RICE DRESSING ~ bjjc/BjjCRAWFORD
1 cup orange juice
1 1/4cup (6oz.pkg.) dried cranberries
2 boxes (6 oz. each) long grain and wild rice mix
water
1 lb. bob evans savory sage roll sausage
1/2 cp diced onion
1/2 cup diced celery
1/2 cup dried bread crumbs
preheat oven to 400" F.
in sm. bowl, combine orange juice and
crand berries.-set aside.
prepare rice mixes according to pkg. directions. wile rice is
cooking .

sauce pan. crumble and cook sausage,onion,and celery over med. heat
untilsausage is browned. stir in cooked
rice,orange juice,cran berries and bread crumbs. spoon into a greased
9'' x 13''
in. baking pan. cover and bake at 400''F for 20 min. may be used to
stuff turkey or chicken. makes 8 cups dressing.
CHINESE SALAD ~ Sandy/sjamie
1 head Napa or bok choy cabbage
3 green onions
1 (3-ounce) package ramen noodles with seasoning pack
1 (6-ounce) package slivered almonds
1 tablespoon sesame seeds
1/2 cup vegetable oil
1/4 cup sugar
3 tablespoons white vinegar
1/4 teaspoon salt
Preheat the broiler.
Tear the cabbage and slice the onions, and place in a large salad bowl. Crumble the noodles into a broiler pan, add the almonds, sesame seeds, and broil for 2 minutes, being careful not to scorch the sesame seeds. In a jar with a tight lid, combine the oil, sugar, vinegar, and salt with the contents of the seasoning pack. Cover the jar and shake well to blend the dressing. Pour the dressing over the salad, add the toasted sesame and almond, and toss to combine.
SHORTCUT SCALLOPED POTATOES ~ Liz/mej
1 pkg. frozen Carnation hash browns (thawed)
1 can cream mushroom soup
1 1/2 cups sour cream
1 large minced onion
3-4 cloves garlic (minced)
2 cups mixed shredded cheese
Saute garlic and onion in margarine or oil. Mix all ingredients together and add salt and pepper to taste. Put into greased casserole and sprinkle with Parmesan cheese. Bake at 350. for 1 1/2 hours covered. Check after 1 hour and if soupy looking, remove lid for the last 1/2 hour.
