PORK RIB ROAST WITH ROASTED CARROTS AND ONIONS - Mickum6
2 lbs. small thin carrots (not baby carrots)
3/4 lb small white onions, halved lengthwise
3 bacon slices, chopped
8 rib pork rib roast (about 4 1/2 pounds)
2 garlic cloves, sliced thin
1/4 cup small leaf clusters from fresh rosemary sprigs
1/4 cup water
1 T chopped fresh parsley leaves
Preheat oven to 350°
In a large roasting pan combine carrots and onions and sprinkle with bacon. Trim fat on pork roast to 1/4 inch thick. With sarp knife make slits in fat about 1 inch apart, insert a garlic slice and a rosemary leaf cluster. Season roast with salt and pepper, arrange, fat side up, on vegetables. Roast pork and vegetables 1 hour and 20 minutes, or until pork registers 160°, put on platter, let stand 15 minutes. Pour off fat from pan, add water to pan with vegetables, cook over high heat stirring to loosen brown bits, until most liquid is evaporated. Arrange vegetables on platter with pork, garnish with rosemary and parsley sprigs.

Mom used to double the recipe for more servings. Everytime I have made it I think of her
2 T shortening
1 lg.onion
1 lg.green pepper
1 lb.hamburger
2 1/2 cups tomatoes
1 T sugar
1/2 lb. spaghetti cooked
1/2 cup grated cheese
1/2 cup bread crumbs
1 T butter to put on the top
salt and pepper to taste
put shortening, hamburger, onion, green pepper chopped fine, cook til tender and hamburger is done, add tomatoes, sugar, salt & pepper: drain spaghetti and add to above mixture, put all in a casserole dish, spread grated cheese over top, cover with fine bread crumbs, put pats of butter on top, bake 1 hour at 350º

BAKED SPAGHETTI & CHEESE - Mickum6
1/2 Box thin spaghetti
1 can tomatoes, DO NOT drain
1 pkg. velvetta cheese, cut into slices
salt & pepper
cook spaghetti in salted water til tender; drain, layer spaghetti,tomatoes, and cheese. pour any remaining tomatoes and juice over all. top layer is cheese. Bake at 350º for 1/2 hr til cheese is melted and slightly brown

PORK CHOPS IN WINE - Mickum6
4 lg. pork chops
2 onions sliced
1/2 cup dry white wine
1 tsp. soy sauce
flour, salt, pepper
saute onions in butter or marg. til brown. Push aside and brown pork chops well on both sides. put in baking dish, sprinkle with flour , salt, and pepper. mix soy sauce with the wine and pour over chops and onions. Cover and bake 1 1/2 hours at 350º Very good with rice

CABBAGE CASSEROLE #2 - Mickum6
1 lg. head cabbage,shredded (about 12 cups)
1 onion, chopped
6 T marg. divided
1 can cond. cream of mushroom soup, undiluted
8 oz.process american cheese, cubed
salt & pepper to taste
1/4 cup dry bread crumbs
Cook cabbage in boiling salted water til tender; drain thoroughly. In lg. skillet, saute onion in 5 T butter til tender add soup and mix well, add cheese; heat and stir til melted, remove from heat, stir in cabbage, salt & pepper, transfer to an ungreased 2 qt. baking dish. In a small skillet melt remaining butter. Cook and stir crumbs in butter til lightly browned; sprinkle over casserole. Baked uncovered, at 350º for 30-40 min. or til heated through YIELD: 6-8 servings

1 cup butter
1 cup sugar
4 large eggs
1 cup dried fruit
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon lemon juice
1 cup brown sugar
1 cup nuts
1 or 2 quarts of aged whiskey
Before you start, sample the whiskey to check for quality. Good, isn't it?
Now go ahead and select a large mixing bowl, measuring cup, etc. Check the whiskey again as it must be just right.
To be sure the whiskey is of the highest quality, pour 1 level cup into a glass and drink it as fast as you can. Repeat.
With an electic mixer, beat 1 cup of butter in a large fluffy bowl. Add 1 teaspoon of sugar and beat the hell out of it again. Meanwhile, at this parsnicular point in time, wake sure that the whixey hasn't gone bad while you weren't lookin'.
Open second quart if nestessary.

Greash ubben and turn the cakey pan to 350º. Now pour the whole mesh into the washin' machine and set on sinsh shycle.
Check dat whixney wunsh more and pash out.

BAKED TOMATOES - Catspawelv
1 lb tomatoes
3 beaten eggs
1/2 cup grated cheese
1/2 cup cracker crumbs
1/4 cup melted butter
1 T onion soup mix
Mash tomatoes and blend all ingredients. Pour into a 2 quart greased casserole. Bake at 350º for 1 hour.

FANCY BLUEBERRY PIE - Catspawelv
1 pkg vanilla pudding mix
1 1/2 cups milk
1 cup whipped cream
2 cups fresh blueberries
1 T cornstarch
2 T sugar
1 T lemon juice
baked pie shell
Make pudding using 1 1/2 cups of milk...chill until thickened. Fold in one half of whipped cream. refrigerate until firm. In saucepan, place one cup of crushed blueberries and add combined cornstarch, sugar, and lemon juice. Cook over low heat until mixture thickens and clears....Cool. Add rest of whole berries and mix together. Pour over pudding mix. Top with rest of whipped cream

EASY MINCEMEAT COOKIES - Catspawelv
1 cup shortening
1 1/2 cups sugar
3 eggs
3 cups unsifted flour
1 tsp.baking soda
1 1/3 cups mincemeat (I use None Such Ready-to-Use..Brandy flavor)
Preheat oven to 375° Beat shortening and sugar until fluffy. Add eggs...beat well. Stir together other dry ingredients and gadually add to shortening mixture..mix well. Stir in mincemeat. Drop rounded tablespoons 2 inches apart, onto greased baking sheet. Bake 8-10 minutes. Can be decorated with a confectionary sugar icing if you like.
