CHEESECAKE CUPCAKES ~ Crissy/rockdaddysgirl
16 Vanilla Wafer Cookies
2(8 oz) Packages Cream Cheese Softened
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract
Preheat over at 350 degrees Line muffin pan with cupcake papers Place one wafer cookie in each cupcake paper In a medium bowl cream together cream cheese and sugar Beat in eggs and vanilla until smooth Pour over wafers in cupcake papers Bake in preheated oven 15 minutes until golden and set

GREEN SALAD DESSERT ~ Norma/NonRam
1 or 2 Lemon lime jello
1 or 2 can crushed pineapples
1 small curad cottage cheese, large pkg.
1 bag crushed walnuts, Optional
whipped cream
Make jello let it set up until it starts to get thick. Then add drained crushed pineapples. Then add cottage cheese. Then add crushed walnuts. Mix all together let chill over night in refrigertor, take out. Then add whipped cream on top and serve.

MEXICAN CHICKEN ~ BjElkins/wvaGirl2
Lg. chicken breast pieces**
1 1/2 - 2 cups crushed fine-plain tortila chips or bowls(tiny)
2 eggs
1 pk. Enchilada sauce mix
1 can Rotel brand tomatoes w/jalapeno pieces, can use (orig., hot or mild) to taste
1 small can jalapeno pepper sliced(optional
2 cups cheddar cheese grated
**Can cut breast pieces to smaller pieces. Beat eggs w/bit of water to thin. Dip chicken in egg and roll in the crushed chips. Fry in hot oil till browned..does not have to be done, just browned. Drain on paper towels, mix tomatoes with sauce mix and 2/3 cups water or little more as needed. Place chicken pieces in a baking dish; cut jalepenos into long strips and lay 1 one top of each piece of chicken.Pour tomato mixture on top. ( I usually sprinkle few more chip crumbs over to help absorb liquid if too thin)bake 25-30 min. spread shredded cheese over and bake till toasty golden brown and melted. I serve with heated can refried beans, and pkg. prepared mexican Rice

PARMESAN CHEESE POTATOES ~ Janice/janabee
1/2 cup flour
1/4 cup grated Parmasan cheese
Salt and pepper to taste
Finely chopped onion
Put above ingedients in paper bag for shaking potatoes Peel and cut potatoes in eighths lengthwise Melt 1 cube butter in 9" x 13" pan Shake potatoes in flour mixture, then place in butter 1 layer deep Bake 1/2 hour at 350 degrees. Turn potatoes with spatula. Bake another 1/2 hour or until done.

BANANA SPLIT CAKE ~ Bonnie/bonnie859
2 cups Gramham cracker..crushed
1 stick melted butter
Press into 13x9 in pan
1 lb.powered sugar
2 sticks melted butter
2 eggs...mix for 1 mins.
Pour mixture over crust then layer
1 can crushed pineapple..drained
4 sliced bananas
Top with 8 oz tub of cool whip and add sliced strawberries..chill

MACARONI & HAM - Fishtayl
2 cups uncooked macaroni, sm. shell or elbow
1 can cream of Mushroom soup
1 cup mayonnaise 3/4 to 1 cup sharp chedder cheese, grated
2 cups cubed ham
1 T grated onion & 1 small can of pimiento
Cook macaroni according to pkg. directions., drain Mix all other ingredients together add macaroni, bake at 350º until bubbly

TAMALE CASSEROLE - Alice1016
2 cans hot chili style beans.
1 can of tamales (remove papers)
1 cup mixed shredded cheese.
1/2 cup mild salsa.
pour l can of beans into 8x8 sprayed cooking pan. lay 1/2 of the tamales cut in half across the beans cover with l/2 of the salsa and l/2 of the cheese. pour 2nd can of beans, rest of tamales, salsa and top with remaining cheese.. bake at 350º for about 1/2 hour or until top is bubbly. Very good with salad and nachos. Leftovers of this also freeze well. If you cook for 1 or 2; you can make this in those little indivdual baking dishes and eat one and freeze 3 for later.

PEACH COBBLER - Bakerbabe2
1 cup of flour
1 cup of milk
1 16 oz can of peaches
sugar to sprinkle
Melt 3 T of margarine or butter in casserole dish in 350º oven in a bowl mix flour and milk together. Add melted butter, then peaches with juice to flour mixture. Stir until mixed Pour back into casserole dish. bake until golden brown and bubbly. Serve Hot

SPAGHETTI CASSEROLE - Bakerbabe2
1 lb. of hamburger meat
1 half of green pepper chopped
1 half of onion chopped
Garlic powder
Cheddar Cheese
Brown hamburger meat with peppers, onion and garlic powder, drain. Add:
1 can of Campbell's tomato soup
1 can of Campbell's Golden mushroom soup
Mix thoroughly. Cook spaghetti according to directions, drain. Add spaghetti to hamburger mixture, mix thoroughly. Place half of mixture into casserole dish. Sprinkle cheddar cheese over all of mixture. Add remaining spaghetti mixture on top and sprinkle cheddar cheese over the top. Bake at 350º until cheese is melted. Serve with Salad and Buttered Rolls or French Bread and Iced tea. The taste is fantastic...

APPLE BROWNIES - HKalme
2 sticks margarine
2 eggs, beaten
2 cups flour
1 tsp.baking powder
2 cups apples, cut small pieces
1 cups nutmeats
2 cups sugar
1 tsp. salt
1 tsp. cinnomon
1 tsp. baking soda
mix margarine, sugar, eggs, salt, together, add rest of ingredients, place in 9x13 pan, bake 1 hour 325º

GINGER PUMPKIN MOUSSE ~ Edda/Eddany1960
1/2 cup sugar or sugar substitute* equivelent to 1/2 c. sugar
1 envelope of Unflavored gelatin
3/4 cup fat-free milk
3 egg yokes, beaten
1 15 ounce Can Pumpkin
2 Tblsp. finely chopped (crystalized ginger) OR 1 teasp. ground ginger
1 tsp. Vanilla
1/2 of an 8- ounce container of frozen whipped dessert topping (thawed)
3 Gingersnaps, halved
In a medium saucepan, stir together sugar & gelatin. Stir in milk and egg yokes. Cook and stir over Medium heat until gelatin is dissolved and mixture just begins to bubble. Remove from heat, Stir in pumpkin, ginger and vanilla. Transfer mixture to a large bowl and Cool for about 20 minutes. Fold dessert topping into pumpkin mixture. Spoon into a six 6 ounce tall glasses or serving dishes. Cover and Chill about 5 hours or until firm.
TO SERVE
top each serving with a gingersnap half. May also sprinkle top with a small amount of cinnamon just for garnish. Makes 6 1/2 cup servings.
This recipe can be made up ahead of time
