Reduced-fat or fat-free vanilla yogurt is a great way to reduce the fat in most muffin, cookie and cake recipes. Use it in place of oil, milk or sour cream. It also adds a bit of sweetness, so the amount of sugar in many recipes can be reduced.

Substitute Fruit Juice for Oil in Baking
For any baking recipe that calls for oil, use any fruit juice instead. The same amount that the oil should be. This is less fattening, healthier and makes for moister cakes, brownies, etc. It does not alter the taste. I usually just open a can of peaches, use the juice then serve the peaches with dinner.

STELLA DORO ANGINETTI COOKIES PUFFS~Wilma
1 (8 oz.) pkg. cream cheese
2 tbsp. sugar,optional
1 lg. (8 oz.) whipped topping
1 lg. (20 oz.) can crushed pineapple
2 lg. bags Stella Doro Anginetti cookies
When cream cheese is soft blend in sugar. Add whipped topping and well drained pineapple to mixture. Slice cookies in half and fill. This recipe may be cut in half.

SWEET CARROT PUMPKIN BARS
1 c all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 lg egg
1 lg egg white
1 c packed brown sugar
1 c canned pumpkin
2 Tbsp canola oil
2 Tbsp trans-free margarine or butter, melted
Grated peel of 1 orange
1 tsp vanilla extract
1 c packed grated carrots
1 c raisins
1/3 c dried cranberries or chopped apricots
1/3 c chopped walnuts or pecans
1. Preheat oven to 3500F.
2. Combine flour, baking powder, baking soda, cinnamon, and salt.
3. In separate bowl, beat egg and egg white until foamy. Beat in sugar, pumpkin, oil, margarine, orange peel, and vanilla extract until smooth.
4. Add flour mixture to egg mixture, and stir by hand until almost combined. Stir in carrots, raisins, cranberries, and nuts just until blended.
5. Spread batter into 8"x 8" pan coated with cooking spray. Bake 30 to 35 minutes, until top springs back when lightly touched. Cool in pan on rack.

FRUIT SALAD
1 can fruit cocktail
1 can crushed pineapple
3 1/2 oz. box vanilla instant pudding
1 can mandarin oranges
1 (8 oz.) Cool Whip
1 c. colored marshmallows
2 bananas
Mix fruit, cocktail and pineapple with the juices. Then mix in the pudding and let thicken for 10 minutes. Drain oranges and add, then add Cool Whip and marshmallows. Chill 2 hours and add bananas before serving.

APPLE COBBLER
1 can apple pie filling
1 pkg. quick cinnamon pecan or orange rolls
Melted butter or margarine
Pour apple pie filling into a 9" pie plate. Dip rolls in butter or margarine; arrange over pie filling. Bake in 375 degree oven for 20 to 25 minutes. Spread the frosting from package over hot rolls. Serve warm with cream.
