OAT AND WHEAT PANCAKES ~ Cheryl
1 1/4 c. oats
2 c. skim milk
1 egg
1/2 c. all purpose flour (can use wheat flour
1/4 c. toasted wheat germ
1 tbsp. sugar, white or brown
1 tbsp. baking powder
2 tsp. vegetable oil
1/2 tsp. salt, optional
Mix oats and 1 cup milk; let stand 10 minutes. Stir in remaining ingredients until well mixed. For each pancake pour a scant 1/4 cup batter on hot well greased griddle over medium low heat. Cook, turning once, until well browned on both sides and cooked through. Makes 12 pancakes.

SWEET-SOUR-MEATLOAF - Cheryl
1 c (15 oz) Tabasco sauce
1/2 c Brown sugar
1/4 c vinegar
1 tsp mustard
mix for topping
2 eggs, beaten
1/4 c fine, bread crumbs
2 small chopped onion
Dash black pepper
salt
2 lb. Ground beef
1/2 lb Ground Veal
1/2 lb Ground Pork
green pepper (optional>
mix, put in baking pan, pour 1/4 sauce over top. Bake 375º 1 hr. when about 1/2 done baking, pour 1/4 c sauce on top again. when done, put meat on platter, pour remaining sauce over top.
