MEXICAN WEDDING CAKES 1C Butter 3/4 C. Powdered Sugar 1 teaspoon Vanilla 2 C. Flour 1 C. Finely chopped Nuts extra powdered sugar 1 teaspoon Almond extract Cream butter, powdered sugar, vanilla, and almond extract. With a spoon, blend in flour. Add nuts, shape into 3/4" balls. Place 1/2" apart on ungreased cookie sheets. Bake at 350 for 25-30 mins. or until cookies are creamy in color. Remove to rack until just warm; roll in powdered sugar; cool completely and roll again in powdered sugar. Store in tightly covered tin. Makes 3 1/2 doz.
