CHICKEN & RICE 1# Boned Skinned Chicken Breasts 2 1/2 C. Hot Water 3 Cups Minute Rice 5 Eggs- beaten well 1 Stick Margarine 1/3 C. Soy Sauce Cut up the chicken into bite sized pieces and sautee until lightly brown. I usually pour some Soy sauce over them while browning them. Prepare the rice. It is less water than normal, but thats for a dryer rice. Melt the margarine in a frying pan and cook the eggs in it. Pour them in and let them set up. Flip and set up other side. When set break it up and add the rice. stir the rice until it turns lightly brown (about 8 mins). Add the chicken and Soy sauce. You can add peas or any vegie you want to the pan if you choose!!! Serves 6 or 4 if they really like it :)
