Audrey's Chocolate Coconut Candies





3/4 Cup Mashed potatoes- Real or Instant- Use water instead of milk



1# Flaked Coconut



1# Confectionery Sugar



1tsp. Almond Extract





Mix all the ingrediants together.  Refrigerate for 30-6- mins.  



Form into small balls and place on waxed paper.



Dip in chocolate coating being sure to coat all sides.





Chocolate Coating:

1pkg Semi-Sweet chocolate pieces

4 ounces chocolate squares

                or

use Carob Chips



1/3 parafin bar





Heat the above in a double boiler to melt.  Keep the water hot while you dip the balls to coat.

Refrigerate or place in cool spot to harden.

Store in air-tight container.   

By using water in the potatoes you eliminate the spoilage factor.
