Fall Recipes = Sidedishes

Hash Brown Potatoes with Asparagus

1/2 bunch (about 12) asparagus spears,
trimmed and cut in 1-inch pieces
1 pkg (8 oz) Food You Feel Good About
Fresh-Cut Chopped Onions
1 yellow or red bell pepper, diced 1/2-inch
1 pkg (1 lb 6 oz) Naturally Potatoes Ready
to Cook Diced Potatoes(red or white)
3 Tbsp vegetable oil

Directions:
1. Boil or microwave asparagus until tender.
Drain and pat dry.

2.Heat oil in large nonstick skillet on MEDIUM.
Add onion and pepper; cook 7 min, or until
onions are translucent and vegetables are tender.

3.Add potatoes; cook until crust begins to form
on the underside, 5-7 min.

4.Stir and cook 5-7 min more until potatoes are
browned on all sides.

5.Return asparagus to skillet and stir to warm
through. Season with salt and pepper.

Optional:
To make it a meal, add 1/4 lb cubed ham or
coarsely chopped smoked salmon along with
asparagus in step #5. Also stir in 2 Tbsp,
or more to taste, chopped fresh dill.

Home-made Applesauce Recipe

Ingredients:
1 quart Apples (peeled and sliced)
1 cup water
1/2 cup sugar
1 tsp. Lemon juice
Cinnamon (optional)

Instructions:
Put all the ingredients in a sauce pan and cook until
tender. Mash the mixture using a potato masher or an
electric mixer until it is smooth. Put the applesauce
in an airtight container and place in the refrigerator
to cool. Once cool, top with a little cinnamon if you
like, and enjoy a bowl of fresh applesauce!
