Turkey Prep

1. If Butterball® turkey is frozen, thaw in the refrigerator or in
cold water. Allow about 1 day for every 4 pounds in the refrigerator or
30 minutes per pound in cold water.
2. When ready to cook, cut open the wrapper. Remove neck from body
cavity and giblets from neck cavity. Drain juices and pat turkey dry
with paper towels.
3. Stuff turkey, if desired. Prepare stuffing, allowing ¾ cup
stuffing per pound for turkeys over 12 pounds. Stuff neck cavity;
turn wings back to hold neck skin in place. Stuff body cavity and
return legs to tucked position if they were untucked.
4. Position the Butterball Turkey Lifter™ on a flat rack in an
open pan about 2 inches deep. Place turkey, breast up, in prepared
pan. Brush skin with oil to prevent skin from drying. Insert an oven-
safe meat thermometer deep into thigh towards body, not touching bone.
5. Roast turkey in a preheated 325°F oven using roasting schedule
below as a guide. Wash hands, preparation utensils and all work surfaces
touched by raw poultry and its juices with hot, soapy water. When turkey
is about two-thirds done, lightly cover breast with a tent of foil to
prevent overcooking the breast.
6. Checking for doneness: An unstuffed turkey is done when the thigh
temperature is 180°F. A stuffed turkey is done when the center of the
stuffing reaches 160°F in addition to a thigh temperature of 180°F. Let
the turkey stand 15 to 20 minutes before carving.
