Apple Mash
- 1 pound Cooking apples
- 2 pounds Potatoes
- 1 tablespoon Sugar
- 2 ounces Butter
Peel potatoes. Cook in salted, boiling water.
Meanwhile peel, core, and slice apples.
Place in a pot with a tablespoon of water,
and the sugar. Cook until soft. When the
potatoes are cooked, drain and mash
thoroughly. Beat in the apples and butter.
This mash goes particularly well with
bacon, or fried herring.
Serves 4
Baileys Mashed Irish Potatoe

- 3lb new irish potatoes
- 8oz salted Kerrygold butter
- pinch salt
- 3 fl oz Baileys
Peel and cut potatoes in half. Boil in salted
water until cooked, drain and leave to rest
for 5 minutes to steam (without lid). Puree
the potatoes in a mincer to avoid lumps and
mix in the Kerrygold butter (cut in slices)
and the Baileys Irish Cream. Season to taste.
More Baileys may be necessary of course!
