Apple Fritter Rings
1 egg
2/3 C. milk
1 tsp. veg oil
1 C. flour
2 T. sugar
1 tsp. baking powder
dash salt
5 large tart apples
1 1/2 C. veg oil
1/4 C. sugar
1/2 tsp. ground cinnamon
In a bowl, beat egg, milk and oil. Combine
flour, sugar, baking powder and salt; stir
into egg mixture until smooth (batter will be
thick) Peel, core and cut apples into 1/2
inch rings. In an electric skillet or deep
fryer, heat oil to 375'. Dip apple rings into
batter, fry a few at a time until golden
brown. Drain on paper towels. Combine sugar
and cinnamon; sprinkle over hot fritters.
Serve warm. Makes about 2 dozen.
Egg Nog for One This sounded good and simple
so I thought I'd share it!! Enjoy!!
Amaretto Bread Pudding
Pudding
1 loaf French Bread
1 quart 1/2/ 1/2
3 eggs
1 1/2 cups sugar
2 T almond extract
3/4 cups almonds, chopped
Amaretto Sauce
8 T butter
1 cup xxxx sugar
1 egg
4 T Amaretto (or more to taste)
To make pudding, break up bread in large
bowl. Pour 1/2 1/2 over it and let stand for
30 minutes. Grease a 9x13 pan with butter.
Beat eggs, sugar and almond extract. Stir in
bread. Add raisins and almonds. Bake at 325
degrees for 50 minutes. Remove and cool. Cut
into squares. To make Amaretto sauce, stir
butter and sugar in a double boiler. Remove
from heat. Whisk in egg, beating well. Whisk
until mixture cools to room remperature. Add
Amaretto...Serve the pudding with the
sauce.
Peanut Butter Sticks
Now, I'm just thinking we can use some
Nutella in the place of the peanut
butter...yum! I don't know if it was in
news:alt.discuss.cooking or
news:alt.discuss.home.cooking but thanks a
lot for telling me about Nutella...yum.
Peanut Butter Sticks
6 slices of thin sliced white bread, crusts
removed
1/2 cup smooth peanut butter
1/4 cup cooking oil
2/3 cup graham cracker crumbs
Cut each slice of bread into 5 sticks. Place
sticks on cookie sheet and toast in oven at
250 for 30 minutes or until browned. Mix
peanut butter and Wesson Oil in top of double
boiler. Dip eachstick into the peanut butter
mixture and coat with graham cracher crumbs.
Let cool completely and store in tins. Yields
30.
Peanut Butter Crispies
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup margarine
1 cup creamy or crunchy peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
Preheat oven to 350 degrees. In small bowl,
combine flour, baking powder, baking soda,
and salt.
In large mixing bowl, beat margarine and
peanut butter until smooth. Beat in one cup
of granulated sugar and brown sugar until
blended. Beat eggs and vanilla into mixture.
Add dry ingredients. Mix well. ( If
necessary, chill dough to make it easier to
handle) Shape dough into 1 inch balls. Place
2 inches apart on ungreased cookie sheet.
Flatten with fork dipped in additional sugar.
(Do not lick fork between flattening dough!)
Bake for 12 minutes or until lightly browned.
