A WORD FOR TODAY





Sauerkraut Balls

For all you that say ewwww sauerkraut, there are very FEW people of that persuasion that DON"T like them!! So as they say, try it you might like it!

Ingredients:

1/2 cup of finely chopped onions
3T bread crumbs
1 pound of HOT Italian sausage
1 can or bag of sauerkraut
1 package (8oz) PHILLY cream cheese (is better)
1T mustard powder
1T garlic salt

Breading:

flour
eggs (beaten)
fine bread crumbs

Remove skin then cook HOT Italian sausage completely. Drain WELL. Combine rest of ingredients completely. (helps to put the cream cheese and sausage together to mix) Refrigerate 1 hour. (if possible, it can be rolled and fried immediately, but I would add extra bread crumbs to help consistency).

Roll about 1T of mixture together to form a ball, and roll in the flour, then egg, then bread crumbs. Fry in hot oil till browned.
