Swedish Creamed Potatoes

6 Tbsp butter
6 cups diced raw potatoes
2 onions,chopped
1 1/2tsp each salt & pepper
1 cup half & half, or more if needed
Heat 2 tablespoons butter in skillet and cook onions until tender. Remove
onions. Heat remaining butter and saute potatoes until golden brown and half
cooked. Add onions, salt & pepper. Add cream and simmer covered over the
lowest possible heat until potatoes are done. Serves 6.
