Fried Potatoes

  4   red potatoes -- cooked with skins and sliced 1/4" thick
  1             medium  onion -- sliced
  2        Tablespoons  vegetable oil
  1         Tablespoon  butter
  12              cups  cheddar cheese -- shredded


In a medium oven proof frying pan, saute onions in oil until limp and
transparent.  Add sliced cooked potatoes.  Saute in oil & butter, turning
until golden brown.  Sprinkle with cheese.  Cover & cook over low heat just
until cheese melts.  Or if using an oven proof frying pan, melt cheese
under broiler.
