BESS TRUMAN'S OZARK PUDDING

Yield: 4 Servings
1 ea Egg, beaten
3/4 c Sugar
1/3 c Flour
1/2 c Walnuts, chopped
1 1/4 ts Baking powder
1 ts Vanilla extract
1 c Heavy cream, whipped
1 ea Cooking apple, peeled
4 tb Rum
1 pn Salt
Preheat oven to 325 degrees. Beat the already beaten egg with sugar
until light in color. In a seperate bowl, sift flour baking powder
and salt. Blend with the egg mixture and fold in the apple, nuts, and
vanilla. Pour into a greased shallow 1 1/2 quart baking dish and bake
30 minutes. At serving time, whip the cream, flavor with rum and
garnish the cooled pudding.
