APPLE ANNIE'S APPLESAUCE PANCAKE SUPPER

2 c. Bisquick or like baking mix
2 eggs
1 c. applesauce
1/2 c. milk
1 tsp. cinnamon
1 tsp. lemon juice
1 teaspoon real vanilla extract
optional ;1 teaspoon rum, brandy, or black walnut extract


Beat all ingredients with hand beater until smooth.
Pour scant 1/4 cup batter onto hot griddle. Bake until golden
brown; turn and bake other side.

APPLE PANCAKES

2 c. Bisquick or like mix baking mix
1 c. milk
3 Tbsp. sugar or brown sugar
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 eggs
1 c. chopped pared apples
1 teaspoon real vanlla extract


Beat all ingredients except apples with wire whisk or
hand beater until smooth; stir in apples. Pour scant 1/4 cup
batter onto hot griddle for each pancake (grease griddle if
necessary). Cook until pancakes are dry around edges. Turn;
cook until brown. Yields about 14 pancakes.

APPLESAUCE  OR PEAR SAUCE PANCAKES

2 c. Bisquick or like mix
2 Tbsp. wheat germ
1 c. apple  or pear sauce
1 Tbsp. lemon juice
2 tsp. ground cinnamon
2 tablespoons brown sugar
1 teaspoon real vanilla extract
1 large egg, slightly beaten
1 1/2 c. milk


Combine all ingredients and mix thoroughly. Batter will
be slightly lumpy. Heat greased griddle until water beads up
on it. Pour 1/4 cup of batter onto hot surface of griddle.
Let small bubbles form on the pancake before flipping. Brown
to desired degree. Serve warm with corn oil margarine, warm
applesauce, apple butter or hot maple syrup.
