LONDON BROIL
London Broil is a simple, quick way to enjoy a lean cut of beef. After you have selected your cut, put together your favorite beef marinate. Don't have one? No problem.. try mine! Mix together 1/2 cup of Olive Oil, 1/4 cup of apple cidar vinegar, 1/4 cup of Worcestershire Sauce, a dash of Lemon juice, fresh crushed garlic-about a teaspoonful. Add any of your favorite herbs or spices. Mrs.Dash tends to have all the good ones together. There is no need to add additional salt. Pepper to taste.INGREDIENTS (for 4 to 6 servings)

METHOD
After you have mixed the marinate, pierce the beef on all sides. Place the beef and marinate in a airtight bag or plastic bowl. Turn the meat to coat. Marinate in the fridge, turning every few hours for a least a day. If you can plan ahead, marinating 2 days is even better. Because the meat cooks so quickly, prepare your other dishes before cooking the London Broil. I recommend Broccoli, with a tasty cheese sauce, or maybe some steamed veggies and pasta or potatoes.COOKING
Make sure your oven rack is all the way at the top. Turn the oven on to 'BROIL'. Place the meat on a double broiler pan. Pour half of the marinate on the meat. Place under the broiler for aprox. 6 minutes for medium rare. (Is there another way to eat a good cut of beef?) Turn the meat over, pour the remaining marinate over it, and broil for another 5 minutes. Let the meat cool for about 10 minutes before slicing. Slice against the grain, in thin strips. Au Jus gravy with mushrooms is the perfect sauce to serve with this tasty, lean cut of beef.
