CHICKEN Á L'ORANGE

     1  large baking Chicken
  1/8  tsp  Pepper
     1  tsp  Ginger
     1  Orange, with rind, sliced
     1  C  Unsweetened Orange Juice
   1/4  C  Honey
 Zest (fine layer of outer skin) of 2 Oranges, slivered
     1  T  All-Purpose Flour
  Orange slices and Parsley for garnish


Rub the body of the chicken with pepper, ginger, and orange slices.
Combine the orange juice and honey.
Place the chicken in a baking dish and with a pastry brush, brush the skin with the orange juice and honey mixture.
Cover and cook at 350 degrees Fahrenheit for 1 1/2 to 2 hours.
When done, remove the chicken from the pan and pour the juices into a saucepan; add the slivered orange rinds and flour, and cook until thickened.
Serve the sauce over the chicken.
