300g spinach, chopped
3 eggs
100 g reduced fat cheese
50 g green capsicum, chopped
50 g onions, chopped
3 drops Tobasco sauce (optional(
low fat cooking spray

Vegetable Cups ( Vegetarian Recipes )


    Add 2 cups boilng hot water to the spinach. Drain after 10 minutes. Spray small baking tins with low fat cooking spray. Combine the eggs, grated cheese, capsicum, onions, spinach and tobaso sauce in a bowl. Divide among the tins. Bake at 250'C for 25 minutes or until a knife inserted in the centre comes out clean.
