Tabouleh ( Arabic / Salads )

Ingredients:
1 cup burgul
1 cup coarsely chopped parsley
1 cup chopped cucumber
1 cup chopped spring onions
1 cup chopped tomatoes (discard seeds)
1 tsp ground pepper
salt to taste
3 tbsp lemon juice
1 cup olive oil

Method:
Soak burgul in water for 40 minutes. Drain and press to remove all water. Mix the burgul with parsley, cucumber, spring onions and tomatoes. In another bowl, prepare the dressing by whisking together olive oil, leon juice, salt and pepper. Add to the salad and toss well. Refrigerate for at least 30 minutes before servng.
