250 g sweet potatoes, peeled and cut into bite size pieces
1 onion, peeled and chopped
2 cloves garlic, chopped
1 tsp gound coriander
1 tsp cumin
1 green chilli, chopped
400 g canned tomatoes
410 g pinto beans, drained and rinsed
125 g green beans
2 big marrows, cut into bite size pieces
Chopped fresh coriander, handful
Yoghurt, harissa and coucous, to serve

Sweet Potato and Bean Couscous ( Vegetarian )


  1. Fry onion and garlic in oil until a lght brown. Add the pices and fry for about a minute, stirring constantly. Add canned tomatoes and about 125 ml water with the sweet potatoes. Cover and cook on low fire until the potatoes are done.
  2. Add beans, marrows and half the coriander. Cook for about five minutes.
  3. Add salt, remaining coriander and a spoonful of harissa. Cook for a minute and take off.
  4. Serve with couscous, yoghurt and more harissa.
