2 tbsp plain flour
2 tbsp sugar
1/2 tsp vanilla essence
250 ml milk
2 medium eggs
15 g butter, softened
250 g fresh strawberries

Strawberry Batter Pudding

    Place flour and sugar in a bowl and add half the milk to make a smooth paste. Whisk in the remaining milk and eggs. Generously grease a cake tin with the butter. Arange strawberries on the greased tin. Stir the batter and pour over the strawberries. Bake in a preheated oven at 200'C for 30 minutes or until golden and risen. Serve while warm or chilled. I prefer it chilled.
