125 ml oil
1 small onion, finely chopped
1 baby marrow, chopped
2 cloves garlc
1/3 cup rice
1 tsp turmeric powder
1 small dried red chilli crushed
1 small green chilli, finely chopped
350 ml water
2 tbsp chopped parsley
600 g squid tubes
For tomato sauce
415 g canned tomato
2 tbsp chopped parsley
2 tbsp sugar

    To make sauce: Simmer tomato, parsley and sugar. Season and cook till reduced a little.
    To make stuffing: Heat oil, add onion, baby marrow and garlic. Cook gently for 10 minues or until soft. Add rice, turmeric powder and chilli and cook for two minutes, stirring frequently. Add salt and pepper as per taste. Add six tablespoons to tomato sauce. Cook stirrng frequently for 10 minutes. Add 150 ml water and continue cokking until rice is tender and all the liquid has been absorbed. Add parsley and cool for a few minutes. Stuff it in the squids using a teaspoon to push the filling down (do not over fill). Seal tube tops with tooth picks.
    Heat remaining sauce and water for two minutes. Add suids. Cover and simmer gently fo 30-45 minutes, until tender. Remove toothpicks and serve with a salad. Serves 4-6.
