675 g unpeeled baby potatoes
5 tbsp olive oil
2 garlic cloves, sliced
1/2 tsp coarse red chilli powder
1/2 tsp ground cumin
2 tsp paprika
2 tsp coconut vinegar
3 capsicums, sliced
coarse sea salt

Spiced Potatoes ( Vegetable Recipes )


    Cook the potatoes in boiling water until almost tender. Drain amd if preferred, peel. Cut into chunks. Heat oil in a pan and fry the potatoes, turning them frequently, until golden. Meanwhile, crush together the garlic, chillies and cumin. Mix with paprika and vinegar. Add this mixture to the potatoes with the sliced capsicums and cook, stirring, for 2 minutes. Serve warm or leave until cold. Scatter coarse sea salt, it you like, before you serve.
