Prawn Pulao ( Seafood / Rice )

Ingredients:
500 g shelled & de-veined prawns
6 tbsp olive oil
1 tbsp ground pepper
2 large onions, finely sliced
2 tbsp chopped ginger
2 green chillies, chopped
4 cloves garlic, finely chopped
3 celery stalks, chopped
4 bay leaves
1 cup rice, soaked for 35 minutes
1 tsp red chilli powder
4 large tomatoes
1 cube fish stock, dissolved in 1 cup water
1 tbsp lemon juice
1 cup chopped mint leaves
salt to taste

Method:
Sprinkle pepper and salt on the prawns and leave aside for 10 minutes. Heat oil in a pan and saute the prawns for 4 minutes. Remove and keep aside. In the same oil, add the onions, garlic, ginger, celery and green chillies and cook till onions are soft. Add the rice and sate for 2 minutes along with the chopped tomatoes, red chilli powder, bay leaves and salt. Add fish stock. Cook covered till rice is almost done, adding little water if necessary. Add prawns, lemon juice and mint leaves. Heat a large frying pan with water and place the pulao pan on this and cook tightly covered for about 10 minutes.
