Mutton With Bukhari Rice ( Lamb/Mutton / Rice )

1 kg mutton
10 onions, sliced
1 carrot, grated
400 g American rice (Uncle Bens)
25 g raisins
25 g pine nuts
6 beef stock cubes (maggi), dissolved in 2 ltrs of water
1/2 tsp salt
Groung black pepper
1 tsp cumin powder
1 tsp corinader powder
5 tbsp olive oil

Heat half the oil and fry the mutton until golden brown in colour. Add half of onions and cook until soft. Add 1 ltr of stock and simmer for 1 hour 15 minutes. Add a dash of pepper and keep aside. Fry carrots and the remaining onions in the remaining oil until light brown. Add salt, cumin, coriander, pine nuts and raisins and cook for 5 minutes on slow heat. Add rice and stock and simmer for 45 minutes, then serve with mutton.
