Lamb With Aubergine ( Lamb/Mutton )

35 ml oil
1 onion, chopped finely
1 clove garlic, chopped
500 g aubergine, sliced and cut into bite size pieces
600 g lamb, cut into bite size pieces
1 fresh red chilli, chopped
1 tbsp each of cumin powder and coriander powder
1 tsp cinnamon powder
1.5 tbsp coconut powder dissolved in 1 cup water
1 tbsp chopped mint
2 tbsp chopped parsley
1 lemon
salt and pepper to taste

Heat pan until very hot and add 10 ml oil. Stir fry onion and garlic until soft. Remove from pan and keep aside. Add 15 ml oil and stir fry aubergine in two batches until golden brown and done. Remove from pan and keep with the onions. Heat 10 ml oil and and stir fry meat in two batches until just browned. Return onion and aubergine to the pan. Add chilli, cumin, turmeric, coriander and cinnamon and stir fry for a minute or two. Add coconut milk and bring to a boil. Stir in mint and parsley. Season with salt and pepper. Serve garnished with lemon wedges. Squeeze the lemon on to the meat in your plate just before you commence eating.
