Frittata With Franks And Ricotta ( Eggs )
1 tsp oil
6 chicken franks, sliced
1 tbsp unsalted butter
8 eggs, lightly beaten
salt to taste
1 tbsp chopped coriander leaves
1 cup ricotta cheese
ground pepper

Preheat oven to 250C. Heat oil in a frying pan and fry franks until done. Set aside. Melt butter and pour it into a baking dish. Add eggs, season with salt and put in the oven. After a minute take out and pull edges into the centre, tilting dish to fill in gaps. Sprinkle franks and ricotta. Pull edges to centre again. Return to the oven and bake till top is set and edges are golden brown. Take out from oven. Sprinkle coriander leaves and pepper. Serve.
