Eggs In A Tomato ( Eggs / Breakfast )

1 large tomato
salt and pepper to taste
a pinch of dried oregano
a pinch of thyme
a pinch of garlic powder
2 eggs

Cut off a thick slice, aabout 1/2 inch, at the stem end of the tomato; set slice aside. Scoop out seeds and pulp. Season the tomato shell with salt and pepper. Place tomato upside down on a dry kitchen towel to drain for about 6 minutes. Place tomato upright in a baking dish. Break eggs into tomato. Pierce egg yolks with a fork. Sprinkle oregano, thyme and garlic powder. place cut slice over tomato. Bake at 150'C till egg is almost cooked.
