Creamed mushrooms ( Vegetarian )

3 tbs unsalted butter
220 g mushrooms, chopped
2 tbsp chopped onion
2 tbsp chopped red capsicum
2 tbsp finely chopped parsley
3 tbsp flour
240 ml evaporated milk
1 tbsp lemon juice
salt and black pepper to taste

Melt butter on low heat. Add mushrooms, onion, capsicum and parsley. Cook for 3 minutes on medium heat, stirring occasionally. Add flour. Cook for 3 minutes on medium heat, stirring continuously. Remove from heat. Gradually add evaporated milk, stirring continuously. Cook on medium-low heat, stirring continuously, till sauce thickens to a coating consistency. Add lemon juice, salt and pepper. Cook for 1 minute on low heat.
