Chicken Noodle Soup 2 ( Chicken / Pasta / Soups )

550 g chicken, cut into chunks
1 onion, peeled and quartered
1 carrot, peeled and quartered
3 sprigs flat-leaf parsley
1/4 tsp each of ground pepper, thyme and marjoram
3 chicken stock cubes mixed in 500 ml water
85 g noodles
100 g button mushrooms, sliced
200 g fresh spinach, large stems removed and chopped

Place chicken in a pan. Place onion, carrot and parsley around it. Sprinkle thyme, marjoram and pepper, Add chicken stock water. Cover and cook on low for 2 to 3 hours. Add 600 ml boiling water, noodles and mushrooms. Cook till noodles are tender. Add spinach and cook for 3 minutes.
