Carrot Halva ( Desserts / Indian / Vegetables )

6 medium size Carrots
500 ml skimmed Milk
10 tsp Sugar (more if you want it sweeter)
10 Almonds
1/2 tsp Cardamon powder
10 tsp ghee
Pinch of Saffron

Soak Almonds in warm water. Peel Carrots and grate them. Heat Ghee in a pan for a minute. Add grated carrots and cook for 15 minutes. Stir it every two minutes. Add Milk, Sugar, Cardamon Powder and Saffron. SStir well. Ccook till the milk is absorbed completely. Chop Almonds and Garnish Halva with the same.
Serves 3.
This dessert is undoubtedly rich, but it is also healthy because you get plenty of fiber, beta-carotene, and protein as well.
