Bhopali Wilted Spinach ( Vegetables / Bhopali )
2 tbs oil
2 tsps finely chopped garlic
tsp crushed dried red chillies
500 g fresh spinach, washed
salt & ground black pepper to taste

Heat the oil in a pan over a high heat. Add the garlic and red chillies and immedietely top them with the spinach. Stir quickly and constantly until the spinach is wilted, about 3 minutes. Season with salt & pepper just as the spinach begins to wilt. Cook for about 2 minutes more until the spinach is tender.
