Baked Mackerel Burger With Ginger Sauce ( Seafood / Snacks )

1/3 cup mayonnaise
1 tbsp fresh lemon juice
1/8 tsp sesame oil
1 tsp grated fresh ginger
1 tbsp whole grain mustard
1/8 tsp garlic powder
freshly ground pepper
6 small round arabic bread, or any suitable bread
6 fresh mackerel fillets
butter flavour cooking spray
1 large tomato, thinly sliced
6 lettuce leaves
6 thin slices of red onion

Heat oven to 250 'C. Combine mayonnaise, lemon juice, sesame oil, ginger, mustard, garlic powder and pepper. Set aside. Cut each bread in half horizontally. Lightly brush the insides of the bread with the pepaed ginger sauce. Wrap in aluminium foil and keep aside. Lightly coat the mackerel fillets with cooking spray. Pat with pepper and bake for about ten minutes. Remove. Warm the bread in the oven for a five minutes. Remove. Place each fillet on the bottom half of the bread. Top with lettuce, tomato, onion and the ginger sauce. Serve right away.
