Welcome! Welcome! You have probably arrived here through some freak accident but I am most happy that you did.

My name is PJ, and I am a homeschooling MOM of several years. My daughter is beginning ninth grade and it hasn't always been easy, but by the Grace of God, we will make it through the twelvth! I, also, have three sons who are now grown with families of their own.

This web page is called Family Down Home because that describes us pretty close. We live on a small farm in Mississippi, raise lots of vegetables for the freezer, and have a few chickens for meat ans eggs. My daughter raises fancy chickens called Partrich Cochins. They are beautiful, heavy chickens with feathers on their feet!

I have my own recipe page called THE RECIPE HUT where you can go to get all the FREE recipes that you want, and I have, just recently, created a website just for Mississippi homeschoolers called MISSISSIPPI HOMESCHOOLED WRITERS. If either of these interest you, please visit. And below you will find some of our recipes.

I am very much interested in FAMILY HISTORY and do quite a bit of family history research. The major families that I am researching are LOPER, WATKINS, CREEL, COWDEN, JONES, LAMBERT, POPE, STEWART, and of course, many other related families. Shepherd's Pie
1 pound boneless chicken cubed
1 large onion diced
1 bunch of broccolli
1 pound baby carrots
10 red potatoes
1 can cream of chicken soup
1 can cream of celery soup
optional:
1 large can peas
1 large can corn

Boil carrots untill tender. Peel, cube, and boil potatoes to make mashed potatoes. Cut up and precook broccoli. While the above are cooking, saute chicken and onions separately untill done.Prepare the mashed potatoes any way you liike and set aside.
Preheat oven to 350. In a non greased 9x13 deep baking dish, add the chicken and onions. Then layer with the vegetables. Add the two cans of soup and one can of water together in a bowl, mix, then pour over the chicken and vegetables. Scoop the mashed potatoes over the top like a crust, dab or spray with margarine. Bake for about 35 mins.

Turkey Mushroom Burgers
1 large egg white (about 2 tablespoons)
1/4 cup dry white wine
1/3 cup soft French bread crumbs
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup finely chopped shallots
1 pound ground skinless turkey breast
4 ounces mushrooms, finely chopped
Olive oil cooking spray
6 onion hamburger rolls or kaiser rolls, split and warmed
Dijon mustard
sliced tomatoes
thinly sliced mild or red white onions
rinsed and crisped lettuce leaves
sliced dill pickles (optional)

In a medium-size bowl, beat egg white and wine until blended. Stir in bread crumbs, salt, pepper, and shallots; then lightly mix in turkey and mushrooms. Shape mixture into six 1/2-inch-thick patties.
Coat a wide nonstick frying pan with cooking spray. Place pan over medium-high heat; then add turkey patties. Cook, turning once, until patties are lightly browned on both sides and juices run clear when a knife is inserted in center (8 to 10 minutes). Serve patties on rolls; add mustard, tomatoes, onions, lettuce, and pickles to taste, if desired. Makes 6 servings. Takes about 15 minutes to prepare and 8 to 10 minutes to cook.
Per serving: 235 calories (12% fat, 45% carbohydrates, 43% protein), 3 g total fat (0.7 g saturated fat), 25 g carbohydrates, 24 g protein, 47 mg cholesterol, 394 mg sodium.
Add trimmings such as tomato and onion slices, mustard, lettuce, and dill pickles - none will add a significant amount of fat. Or add a dollop of lean relish or chutney.

BLACK FOREST CHEESECAKE
Cherry Topping:
1 pound frozen unsweetened cherries, thawed
1/4 cup kirsch
1/4 cup sweet or sour cherry syrup
Chocolate Crust:
8 1/2 oz chocolate wafer cookies
3/4 stick well-chilled butter, cut into 1/2-inch pieces

Chocolate Filling:
1 1/2 cups whipping cream
12 ounces semisweet chocolate, chopped
16 ounces cream cheese, room temp
3/4 cup sugar
4 eggs, room temp
1 1/2 tsp vanilla
1 cup whipping cream, chilled (I use heavy whipping cream.)
3 tblsp sugar
1 tblsp kirsch
Chocolate curls (optional)
For topping: Soak undrained cherries and kirsch in small bowl 6 hours. Thoroughly drain cherries in strainer , shaking occasionally, at least two hours. Reserve liquid. Add enough cherry syrup to cherry liquid to measure 1 cup. Pour 6 tablespoons into heavy 8-inch skillet ( save remaining liquid for filling). Halve cherries and add to skillet. Boil until syrup is thickened and mixture looks a little like preserves, about 6 minutes. (Can prepared 2 days ahead). Chill.
For crust: Butter 9-inch springform pan well. Crush cookies in processor, using on/off turns. Cut in butter until it begins to bunch up, using on/off turns. Press into bottom of pan and up sides to 3/4 inch from top; there should be no cracks. Refrigerate crust for at least 30 minutes.
For filling: Preheat oven to 325 degrees . Heat 1 1/2 cups cream with chocolate in heavy saucepan over low heat until chocolate melts, stirring constantly. Cool 10 minutes. Beat cream cheese with 3/4 cup sugar till smooth. Beat in eggs 1 at a time until just combined. Beat in chocolate mixture, then remaining 10 tablespoons cherry liquid and vanilla. Pour into crust. Bake until outer 2 inches of cake are firm but center still moves slightly, about 1 hour and 20 min. (top may crack). Cool completely on rack. Leave in pan, cover pan with paper towels and cover tightly with foil. Refrigerate 1 to 2 days. Remove foil, towels and pan sides from cake. Spread on the cherry topping. Beat last 1 cup cream with 2 tablespoons sugar and kirsch to form peaks. Spoon into center of cake. Top with chocolate curls if desired. If refrigerated, let stand at room temperature for 15 minutes before serving.
