This is another simple but outstanding recipe "Filet Mignon Dupont" Butter fly cut the filet & Cook the filet to desired doneness. While cooking saute french cut sweet red onions, and sliced mushrooms,in butter,with fresh chopped garlic, deglaze and flambe with brandy. When filets are done fill with the saute, and top with sliced provolone cheese, and shredded parmesan cheese, and bake till cheese has engulfed the filet. Top with paparika, and fresh chopped parsely.
