Recipes From The Heart

-Elephant Ears-
Makes 4 large "Ears"

1 cup flour
1/4 cup butter or margarine
2 tablsp. sugar
1/2 teas. baking powder
1/2 teas. salt
1/3 cup milk
1 teas. cinnamon
1/2 teaspoon salt

Heat oven to 400.
Grease cookie sheet with the shortening.
Mix the cinnamon and 2 Tabls. of the sugar in a small bowl. Set aside.
Melt the butter (or margarine) over low heat and set aside.
Mix the flour, sugar, baking powder and salt in a large bowl.
Stir in 3 Tabls. of the melted butter (or margarine) and the milk
Sprinkle a clean surface with flour and knead about 10 times
Pat into a 9x5 inch rectangle.
Brush the dough with the rest of the melted butter
then sprinkle with the cinnamon sugar mixture.
Roll up tightly beginning at the short end of the rectangle.
Pinch the edge to seal. Cut roll into 4 equal pieces.
Put pieces cut side up on the cookie sheet. Pat into 6 inch circles.
Sprinkle with remaining sugar. Bake 10 minutes or until golden brown.
Remove from cookie sheet and cool on a wire rack.
