Make a well in the center of the flour.
Mix in egg yolks, egg and salt. Add water, 1
tablespoon at a time, until dough is stiff but
easy to roll.
Divide dough into 4 parts. Roll one part at a time
into a thin rectangle. Keep remaining dough covered.
Cut dough into strips and lay out in single layers while
you cut the rest of the dough. you can use right away
or let them fully dry and store them in an air tight container.
(I always triple this recipe because my family just
can't get enough of them.)

parmesan cheese. Everyone loves homemade noodles)
